This delicious ground beef stir fry with vegetables is loaded with flavor and packed with protein. Made with fresh vegetables, this stir fry with ground beef is a fantastic weeknight dinner option that can also be used for meal prep.
In a mixing bowl, mix together the sauce by whisking the water, soy sauce and corn starch, Hoisin sauce and honey. Whisk well to prevent any lumps. Set sauce aside.
In a large skillet, add the carrots, broccoli, peas and bell pepper, and 1 cup of water. Place skillet over medium high heat and bring the water to a simmer. Lower the heat to medium low, and steam the vegetables for approximately 5 minutes. Vegetables will still be slightly firm. Drain off any excess water. Transfer the vegetables to a bowl, and cover to keep warm.
Place hot skillet back on to cook top and bring to medium high heat. Brown the ground beef. Drain off any excess fat the beef renders.
Pour the prepared sauce over the ground beef. Heat over medium low heat for 1-2 minutes until the sauce thickens with the beeef.
To the skillet with the beef, add the steamed vegetables. Stir all ingredients together so the beef and vegetables are well incorporated. Serve right away with white rice, brown rice or cauliflower rice.
