Refreshing Melon Mojito with Rum Cantaloupe and Mint

Served icy cold, this refreshing mojito cocktail is perfect on a hot day! Cantaloupe, honeydew, lime and mint make this drink amazing!! Fantastic for Cinco de Mayo, too!

- 1/2 cup cantaloupe melon
- 4-6 fresh mint leaves plus more for garnish
- 1 1/2 oz. rum like Bacardi
- 2 Tablespoons simple syrup
- juice of 1/2 lime
- club soda to top off drink
In a cocktail shaker, add the melon and mint leaves. Muddle together. (Crush well to mash the melon and mint together.)
To the muddled melon and mint, add in the rum, simple syrup and lime juice. Add in ice.
Add the lid to the cocktail shaker and secure tightly. Shake vigorously. In a glass, pour the mixture over ice. Top the drink with club soda. Garnish with melon balls and or mint leaves, if you prefer. Drink right away while cold.
Optional: Add in 1 oz. of Midori liqueur to the drink. It will give it a more vibrant green color.
Melon: Feel free to substitute honeydew melon for cantaloupe, or use a combination of both melons.
