Looking for an easy Rotel dip recipe? This Rotel cheese dip with ground beef is super simple to make, and only needs 4 ingredients. Can be made in a skillet or crock pot!
In a large skillet, over medium-high heat, brown the ground beef. Drain off any excess fat that has rendered. Return the drained beef to the skillet.
To the beef, add in the Rotel tomatoes with the juice, Velveeta and hot sauce. Heat over medium-low heat, stirring often with a rubber scraper for approximately 5-7 minutes.
Once all the cheese has completely melted, the dip is ready to be served. Can be served right out of the skillet or kept warm in a slow cooker.

Slow Cooker Instructions: Brown and drain ground beef. Add to a slow cooker along with the Velveeta, Rotel and hot sauce. Heat on low for 2 hours, stirring often and until all ingredients have melted together. Serve directly out of the crock pot, keeping the heat on low setting.Storage: store any leftovers in an airtight container and refrigerate. Dip will keep for up to 5 days refrigerated. Reheat in the microwave or in a skillet until fully heated through – approximately 10 minutes over medium-low heat, stirring often.
