What do I need to make a Rotel dip recipe?
- Ground Beef – I recommend using a lean 90/10 beef. You can also substitute mild, spicy or Italian sausage instead of beef.
- Rotel – Rotel is canned, diced tomatoes with green chilies. You can use original (pictured above), mild or hot.
- Velveeta – to be clear, this isn’t actually cheese. Velveeta is a shelf-stable processed cheese product. If you would prefer to use other cheeses, I would recommend cream cheese along with another shredded cheese, like Colby Jack, Monterrey Jack or Cheddar.
- Hot Sauce – I like Frank’s Hot Sauce, but you can use any hot sauce you prefer.

To the browned ground beef, add in the Velveeta, Rotel with the juice, and the hot sauce. Heat over medium low heat, stirring often. The mixture will begin to melt together.
Once the Velveeta has completely melted together with the rest of the ingredients, the dip is ready to serve.

Making Rotel cheese dip in a crock pot is a very simple process. Start by browning the ground beef in a skillet, draining off the excess fat.
To your Crock Pot or slow cooker, add the browned ground beef, Rotel with the juice, Velveeta and hot sauce. Set the slow cooker to low heat for approximately 2 hours. Stir often to incorporate the ingredients so they are melting together evenly.
The dip is done and ready to serve when the Velveeta has completely melted and is combined with the rest of the ingredients. The dip can be served and kept warm directly from the Crock Pot.

Ingredients
- 1 lb. ground beef browned and drained
- 1 (10 oz. can) Rotel diced tomatoes with chilies, with juice mild or hot
- 1 (16 oz. box) Velveeta processed cheese
- 2 Tablespoons hot sauce like Frank's or Cholula
Instructions
- In a large skillet, over medium-high heat, brown the ground beef. Drain off any excess fat that has rendered. Return the drained beef to the skillet.
- To the beef, add in the Rotel tomatoes with the juice, Velveeta and hot sauce. Heat over medium-low heat, stirring often with a rubber scraper for approximately 5-7 minutes.
- Once all the cheese has completely melted, the dip is ready to be served. Can be served right out of the skillet or kept warm in a slow cooker.
