To a shallow microwave-safe bowl or ramekin, add the diced apples. Add in the sugar, cornstarch and cinnamon. Stir to coat the apples. Microwave the apple mixture for 1 minute.
In a separate small bowl, melt the butter. To the melted butter, add in the oatmeal, coconut sugar, flour, cinnamon, and salt. Stir together to combine and create a crumble mixture. If you're using pecans, stir these into the crumble topping.
Sprinkle the crumble topping over the top of the cooked apple mixture. Microwave for another 90 seconds.
Enjoy right away while warm. Top with vanilla ice cream or whipped cream, if desired.
For cherry crisp: use 2/3 - 3/4 cup fresh or frozen cherries that have been pitted and halved. Follow same directions for apple mixture above.
For peach crisp: use 2/3 - 3/4 cup fresh, frozen or canned peaches. Feel free to keep peaches as slices, or chop into smaller pieces. Follow same directions for apple mixture above.
