Made with simple ingredients you likely already have in your fridge and pantry, this is microwave apple crisp comes together quickly and easily.
In this post I’ll show you how to make a single serving apple crisp, what ingredients you need as well as what substitutions and additions you can make. I’ll also show you how to what bowls and containers work best and what tools you’ll need for making a single serving dessert.
What do I need to make microwave apple crisp?
- Apple – the best apples for an apple crisp or cobbler are ones that are firm and with a slightly tart, sweet flavor. These include Granny Smith, Winesap, Jonagold, Honeycrisp or Braeburn.
- Sweetener or granulated sugar – you can use granular monk fruit sweetener, I like Whole Earth, if you’re looking to limit refined sugar in your diet. You can also use regular granulated (white) sugar.
- Cornstarch– this helps keep the juices of the apple from becoming overly watery in the dessert.
- Cinnamon – a fantastic spice paired with apples, cinnamon is used to both season the apple as well as the crumble topping.
- Salt – ideal for adding to the crumble topping to balance the sweetness.
- Butter – either salted or unsalted, butter is needed to create the crumble topping.
- Coconut sugar or brown sugar – I used coconut sugar, as a substitute for brown sugar, to keep the refined sugar content low while still keeping the crumble topping sweet. If you want a more traditional crisp, feel free to use brown sugar.
- Flour – flour is needed to create the crumble topping for the crisp.
- Optional: Chopped pecans – pecans are not necessary when making apple crisp, but are a wonderful addition, especially if you love some extra crunch in your crumble topping.

How do I make apple crisp for one?
A single serving apple crisp has two components; the soft cinnamon apple mixture on the bottom and the brown sugar oatmeal topping.
To make the apple cinnamon mixture, start by peeling and dicing an apple. Place the apple in a small shallow bowl. To the diced apple add in the cinnamon, corn starch and sweetener (or sugar.) Mix together to coat the apples.
Microwave the apple mixture for about 1 minute to soften the apples. The mixture will be slightly soft and gooey.
How do I make apple crisp topping?
To make the topping for microwave apple crisp, start by combining the flour, brown (or coconut) sugar, cinnamon and oatmeal. Stir together to combine. Add in the melted butter and stir the mixture together until crumbly. If you’re using pecans stir these in as well.
Crumble the oatmeal topping over the top of the apple mixture. Return the crisp to the microwave and cook for another 90 seconds.
Ingredient Substitutions and Recommendations:
- Peaches or Cherries instead of apples – I’ve tested both peaches and cherries in this recipe, and they work well. For peaches, you can use fresh, canned or frozen (thaw before cooking) peaches. For cherries, you can use fresh or frozen (thaw before cooking).
- Canned Pie Filling – in a pinch you could certainly use pie filling instead of fresh fruit. Pie filling often contains significant amounts of refined sugar and syrup and isn’t always the healthiest option. In my opinion, fresh or frozen fruit is not only much healthier, but tastes far superior. For pie filling you’ll use approximately 1/2 cup per serving.
- Pecans or Almonds – adding chopped pecans or sliced almonds is a great way to add extra texture and crunch to your apple crisp. One tablespoon is an ideal amount. I highly recommend this addition!

Ingredients
Apple Mixture:
- 1 medium apple cored, peeled and diced
- 1 Tablespoon cornstarch
- 1 Tablespoon granular monk fruit sweetener or regular refined sugar
- 1/2 teaspoon cinnamon
Crisp Topping:
- 1 Tablespoon butter melted
- 1 1/2 Tablespoons Old fashioned rolled oats or plain instant oats
- 1 1/2 Tablespoons all-purpose flour
- 1 Tablespoon coconut sugar or brown sugar
- 1/2 teaspoon cinnamon
- pinch salt
- 1 Tablespoon chopped pecans optional
Instructions
- To a shallow microwave-safe bowl or ramekin, add the diced apples. Add in the sugar, cornstarch and cinnamon. Stir to coat the apples. Microwave the apple mixture for 1 minute.
- In a separate small bowl, melt the butter. To the melted butter, add in the oatmeal, coconut sugar, flour, cinnamon, and salt. Stir together to combine and create a crumble mixture. If you're using pecans, stir these into the crumble topping.
- Sprinkle the crumble topping over the top of the cooked apple mixture. Microwave for another 90 seconds.
- Enjoy right away while warm. Top with vanilla ice cream or whipped cream, if desired.
