INGREDIENTS

– 2 Tbsp. olive oil – 1 lb. Sirloin tips, cut into bite-sized pieces – 3 Tbsp. adobo sauce – 2-4 chipotle peppers in adobo sauce, diced – 1 medium yellow onion, chopped – 1 green bell pepper, chopped – 1 (15 oz.) can, red kidney beans, rinsed – 1 (15 oz.) can, great northern beans, rinsed – 1 (15 oz.) can, tomato sauce – 1 (15 oz.) can, diced tomatoes – 1/2 c. water – 1 1/2 tsp. chili powder – 1 tsp. cumin – 1/2 tsp. onion powder – 1/2 tsp. garlic salt

Step 1: Sauté Peppers & Onions

In a large stock pot or Dutch oven, heat the olive oil. Add the diced peppers and onions and cook for 4-5 minutes or until the onions are translucent.

Step 2: Add chipotle peppers and adobo sauce to steak

Add the sirloin tips, adobo sauce, and chipotle peppers. Stir to coat the steak.

Step 3: Brown the Steak with peppers and onions

To the same pot, with the peppers and onions, add the coated steak, and sauté until mostly browned.

Step 4: Add beans, tomatoes & spices

Add the rinsed beans, tomato sauce, diced tomatoes, water, chili powder, cumin, onion powder, and garlic salt. Stir to combine. Bring to a boil.

Step 5: Simmer

Reduce heat and simmer over low heat for 15-20 minutes.

Remove from heat and allow the chili to cool slightly for 5-10 minutes before serving.

Enjoy!

Top with all of your favorite chili toppings, like sour cream, shredded cheese, sliced jalapeños and/or fresh cilantro.
