Have you ever made Whoopie Pies before? Up until yesterday, I had never made them.
Over the weekend, Harrison and I were in Home Goods, where we came upon one of their clearance racks. There were several cookie sheets, pots and pans, and then I discovered a treasure: a whoopie pie pan!! AND, it was only $5!!! Needless to say, I clutched it to my chest, grabbed Harrison and made my way to the check out line.
I did a little research to see if I needed to do anything different with a cake recipe to turn it into whoopie pies. I discovered that you don’t really need to do anything different – so if you have a favorite cake recipe, you can turn it into these cute, yummy little snack cakes. How cool is that!?!
First stop on the whoopie pie train: Pumpkin Spice!!! To me this was an obvious decision, because A) its fall, B) Halloween is right around the corner, and C) I wanted something to go with my Pumpkin Spice Latte. 🙂
Here is the recipe for these amazingly sweet, fluffy bites of goodness:
Pumpkin Spice Whoopie Pies
A fun, easy treat for kids or grown-ups alike! Pumpkin Spice cakes with a marshmallow cream cheese filling - perfect for a fun Halloween Party or an easy fall snack.
Ingredients
- 1 (15.25 oz.) Spice Cake Mix (like Betty Crocker)
- 1 c. water
- 1/2 c. vegetable oil
- 3 eggs
- 1 (15 oz.) can, pumpkin puree
- Filling:
- 1 (8 oz.) pkg, cream cheese, room temperature
- 1/4 c. (1/2 stick) of butter, room temperature
- 1 (7 oz.) container, Marshmallow creme
- Sprinkles for garnish (optional)
Instructions
- In a mixing bowl, combine cake mix, water, vegetable oil, and eggs. Mix with hand or stand mixer for about 1 minute on low. Add the pumpkin puree and mix for another minute until completely combined.
- Using a small ladle or ice cream scoop (about 2-3 Tbsp.), add batter to the pan circles. Bake for 12-14 minutes. Let the cakes cool for about 5 minutes. Using a butter knife, go around the edges of the cakes to loosen before removing from the pan. Transfer to a cooling rack, and cool the cakes completely. Do this until all the batter is gone. It will make about 36 cakes = 18 whoopie pies.
- While the cakes are cooling, in a clean mixing bowl mix the cream cheese, butter and marshmallow creme with a hand or stand mixer. Using a rubber scraper, scrape down the sides to ensure all the ingredients are combine. Mix for a couple minutes, until light and fluffy.
- Using, teaspoon, scoop and spread the filling onto one of the cakes and sandwich together with another. Garnish with your choice of sprinkles, if desired.
If Home Goods would have had another pan, I would have bought it. It would have been nice to have a second pan of batter ready to go, as I filled the pan three times (making 36 cakes). If you can’t find a Whoopie Pie pan at Home Goods, you can definitely find one on www.Amazon.com.
These cakes were amazing!! I can’t wait to try some more combinations, and I’m thinking I will try some flavored fillings, too. I love coming up with these fun, easy treats. These would be perfect for a kids (or grown-ups!) Halloween party, classroom treat for a fall celebration, or bake sale goodies. The possibilities are endless!

Yep! The pan made the process really easy. When doing some research I noticed there were some recipes that have you pour batter onto a cookie sheet. I thought that you would need a really thick batter for that so they wouldn’t all run together. Hope you give these a try soon – soooo good!
