The perfect dinner option when you don’t feel like cooking. This Baked Sausage and Peppers recipe is simple to throw together after a long day, but when you also want to have a decent meal with your family.
This Sheet Pan Sausage and Peppers recipe is also great for meal prep, and taking to work for a healthy lunch. Made with high-protein chicken sausage, and baked together with sweet potatoes, bell peppers and onions, this healthy dinner option is perfect for any night of the week.

What ingredients do I need for baked sausage and peppers?
- Sweet potatoes – most grocery stores carry sweet potatoes (often labeled yams) in the produce section all year. Sweet potatoes are a very economical and are complimentary with the savory sausage.
- Bell peppers – you can choose any color – green, red, yellow or orange. A great way to add color and fiber to this sheet pan recipe.
- Red onion – this adds some nice color and when baked caramelized well for a nice sweet flavor that goes well with the sauage.
- Seasoning – I like to use Italian seasoning and black pepper. This seasoning will go on the potatoes, peppers and onions. You could add a small amount of salt, if you prefer, however, I found that it is unnecessary when paired with this very savory sausage.
- Sausage – I like using this Parmesan & Cracked Black Pepper Chicken Sauasage from Costco. You could also use turkey, pork or beef sausage in this recipe.

How do I make sheet pan sausage and peppers with sweet potatoes?
You’ll make this recipe is two parts; first, baking the sweet potatoes, bell peppers and onions for the first 20 minutes. Second; adding the sausage onto the potatoes and vegetables for the second 20 minutes.
The potatoes and vegetables need more time to bake in the oven than the sausage. Most store-bought sausage is already cooked through, therefore, only needs time to reheat and warm through fully.
How do I prepare the sweet potatoes, peppers and onion?
Begin by peeling and dicing the sweet potatoes into cubes. Toss these onto a large sheet pan.
Cut the bell peppers into bite-sized pieces and toss these onto the sheet pan with the potatoes.
Cut the red onion into bite sized pieces, and toss these onto the sheet pan with the potatoes and peppers.
Drizzle the potatoes and vegetables with the olive oil and sprinkle with the spices. Place the pan into the oven to bake, as the potatoes and vegetables need longer to cook than the sausage.


What sausage is best for oven baked suasage and peppers recipe?
While the potatoes, peppers and onions bake, for the first 20 minutes, slice up the sausage links. The sausage pieces will be added to the sheet pan ingredients after the potatoes and peppers have pre-baked.
I really enjoy this cooked chicken sausage from Costco. The Parmesan and Cracked Pepper Chicken Sausage is high in protein and very flavorful. Its savory and pairs well with the sweet potatoes and peppers.
Once the sweet potatoes and peppers bake for the initial 20 minutes, take out of the oven, add the sausage pieces. Return to the oven and bake for another 20 minutes for the sausage to heat through.

If you’re a meal-prepper, this sheet pan recipe is fantastic! Great for making on a Sunday afternoon or doubling up on a weeknight.

- My family doesn’t like chicken sausage. Can I use something else? Feel free to use turkey, chicken, pork or beef sausage. I’ve made this recipe with chicken sausage as well as smoked German sausage (beef), which was delicious. You can leave the links whole or slice.
- How big of a pan do I need for this recipe? A good sized sheet pan is 12×16″ (half-sheet). I have these Nordic Ware Natural Aluminum Commercial Baker’s Half Sheet (2 Pack), (Amazon affiliate link) which are fantastic. I use them ALL THE TIME and love them!
- I need something lower-carb option instead of sweet potatoes. What can I substitute? I would recommend cauliflower rice. This will actually eliminate a step in the recipe (no pre-baking the potatoes). Simply heat your cauliflower rice (if frozen, prepackaged) according to package directions, and serve over the rice. Season as needed.

Easy Oven Baked Sausage and Peppers with Sweet Potatoes
Equipment

Ingredients
- 2 sweet potatoes, large about 1 lb. peeled and sliced
- 2 bell peppers, medium any color, sliced
- 1 red onion, medium sliced
- 3 Tablespoons extra virgin olive oil divided
- 1 ½ teaspoons Italian Seasoning
- ½ teaspoon pepper
- 1 (13 oz. pkg.) chicken sausage, sliced or turkey sausage
Instructions
- Preheat oven to 375 degrees.
- Peel and slice sweet potatoes into cubes. Cut the bell peppers and onion into bite-sized pieces. Place potatoes, peppers and onion pieces onto the sheet pan. Toss with the olive oil. Sprinkle with the seasoning and pepper. Bake for 20 minutes.

- While the sweet potatoes and veggies are baking, slice the sausage into pieces.
- Once the sweet potato mixture is done pre-baking, add sausage on top of the sweet potatoes directly on to the sheet pan, keeping everything in an even layer. Return the sheet pan to the oven and bake all ingredients for another 20 minutes at 375 degrees.

- Remove from oven and serve right away while warm.
