Loaded Chicken Enchilada Pasta
In all honesty, how hard is it for you to get dinner on the table? If you're anything like me, its probably one of the biggest challenges of the day. Many of you are just getting home from work, or just getting your kids home from school, and once you walk into the kitchen you face that ever daunting question, "What am I going to make for dinner?" A while back, I distinctly remember listening to a radio show, where they had an expert in meal planning talking about the best way to tackle the haunting question of what to make for dinner. I remember her saying that if you find yourself in the middle of the grocery store at 5pm wandering through the aisles trying to find ideas, you've already lost the battle. She then said that having specific, go-to recipes that you and your family … [Read more...]
Twice-Baked Chicken, Bacon & Ranch Potatoes
Leftovers - love 'em or leave 'em? I go back and forth all the time. I mostly love them. I learned, very early in my life, to cook for a crowd. I am one of four kids, so growing up I was usually helping cook a large meal that would feed at least six people for dinner. Portions were large, as my brothers could easily eat enough for two people. Now that I have a small family (just three of us), I tend to still cook like there are six people in the house. Over the years, I have learned to gradually scale back the amount of food I cook, but there is usually still way more food for just one meal. Thus, leftovers! The part of "leftovers" that I love is the fact that there is no food prep involved for making another meal. Yesss!!! That equates to a major time savor. And any … [Read more...]
BBQ Chicken and Red Grape Pizza
Do you and your family have Pizza night every once in a while? As a kid I remember having pizza for dinner was such a treat. Mostly because it was one of the few times we were allowed to have soda with our meal. :) I grew up in a small town, where the only place you could get pizza from the grocery store freezer, or your own oven. I still really enjoy a good homemade pizza, even though we now live in suburban Washington, DC where you can get a pizza delivered to your house within the hour. This pizza is really the best of both worlds - the homemade flavors and the easy convenience. The recipe uses a store-bought refrigerated pizza dough, and BBQ sauce from a bottle. Obviously, you could easily make your own crust and sauce. However, there are some nights where you just need to … [Read more...]
