Looking for a fluffy, delicious cottage cheese egg bake recipe? This simple spinach egg bake with cottage cheese makes a fantastic breakfast meal prep option. With 18 grams of protein per serving, its the perfect way to prioritize protein at breakfast.

Looking to start your day with some extra protein at breakfast? A single serving of this spinach egg bake with cottage cheese has 18 grams of protein. It’s also low carb and has extra fiber from the spinach and tomatoes.

If you’re looking to begin meal prepping breakfast, this egg bake is a great option. It makes 6 servings, so your breakfast for the week would be set. Pair with fruit, yogurt or a whole grain English muffin for a healthy, filling breakfast.

What do I need to make spinach egg bake with cottage cheese?

  • Eggs – I recommend using large eggs that are at room temperature. You could also substitute egg whites or egg substitute.
  • Cottage cheese – go with a 2% fat content collage cheese. I don’t recommend using fat-free cottage cheese, as the taste and texture isn’t great for baking.
  • Shredded Cheddar Cheese – I sed a 2% milk shredded cheddar cheese, which is a great lower-calorie option. Feel free to use full fat cheese if you wish.
  • Fresh baby spinach – fresh spinach can be found in the produce section of the grocery store. You could also use frozen spinach, just be sure to fully thaw and press out any extra water before adding to the egg mixture.
  • Cherry or grape tomatoes – tomatoes add some great color and flavor to the egg bake. You could also add a can of petite diced tomatoes (drained) if fresh is not available.
  • Spices – dried minced onions, salt and pepper are simple spices that enhance the flavor of the egg bake.

How to I make cottage cheese egg bake?

Start by whisking together the eggs, cottage cheese, onions, salt and pepper. Whisk together well to create a fluffy, foamy texture.

Whipping the eggs with a large whisk will help add air to the eggs, creating a light and airy texture.

To the egg mixture, add the chopped spinach, sliced tomatoes and shredded cheese. Fold these into the egg mixture with a rubber scraper so it is well incorporated.

Ingredient Substitutions and Recommendations:

  • Change up the veggies – instead of spinach and tomatoes, try a combination of mushrooms, bell peppers, fresh onions or asparagus.
  • Change up the spices – for more of a Tex-Mex flavor, add in a 1/2 teaspoon of chili powder and cumin.
  • Change up the cheeses – instead of shredded cheddar, try crumbled feta or goat cheese for a creamy texture.

Baking the cottage cheese egg bake

Once all the ingredients have been mixed together, pour into the prepared baking dish. Bake the mixture until well set and golden brown along the edges. You’ll know the egg bake is done when the pan is slightly shaken, and the egg mixture in the middle is set and does not jiggle.

If you prefer, top the egg bake with extra shredded cheese for a golden brown topping.

How long do I reheat egg bake in the microwave?

Depending on the power and wattage of your microwave, a slice of egg bake will need 2-3 minutes to reheat to steaming. Start with 2 minutes and test to see if the eggs need additional time to reheat.

How long do eggs need to bake in the oven?

When baked in a 9 x 9″ pan, an egg bake with vegetables and cheese will need approximately 45-50 minutes at 350 degrees.

What pan is best for making egg bake?

An egg bake that is made with 8 eggs is best baked in a baking or casserole dish. A 9 x 9″ dish, or a medium oval baker is ideal. An egg bake can also be made in non-stick or cast iron skillet.

Can I add cottage cheese to egg bake for extra protein?

Yes, cottage cheese can be added to an egg bake. This will help create an extra soft and fluffy texture and will add extra protein to each serving.

How long will egg bake last?

When kept refrigerated, egg bake will keep for 5-7 days in a resealable container.

When meal prepping this spinach egg bake, I recommend storing the slices pre-cut in individual meal prep containers or in one large resealable container in the refrigerator.

For a single serving of egg bake, I recommend reheating it for approximately 2 minutes. Test the temperature, and if it needs more time, heat for additional 30 second increments until hot and steaming.

What can I serve with egg bake for extra protein and fiber?

I would recommend pairing your cottage cheese egg bake with a serving of Greek yogurt and berries. I like add milled flax and chia seeds to my yogurt for extra fiber. Another great option would be a protein muffin, a whole grain English muffin or low-carb bagel.

Ingredients
  

  • 8 eggs, large
  • 2 cups cottage cheese any type
  • 1/2 cup shredded cheddar cheese 2% skim or regular
  • 2 cups spinach chopped
  • 1 cup cherry tomatoes halved
  • 1 Tablespoon dried, minced onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper

Instructions
 

  • Preheat oven to 350 degrees. Lightly spray a 9 x 9" baking dish or pan with non-stick spray. Set aside.
  • In a large mixing bowl, whisk together the eggs and cottage cheese. Add in the minced onion, salt and pepper. Mix to combine the spices. Using a rubber scraper, fold in the spinach, tomatoes and shredded cheese to the egg mixture.
  • Pour the egg mixture into the prepared pan. Bake at 350 degrees for 45-50 minutes. You'll know the egg bake is done by lightly shaking the pan. The center portion of the egg bake should be set and not loose or jiggly.
  • Let cool for 5-10 minutes before slicing.

Storage: Egg bake can be stored and refrigerated in individual meal prep containers or in one large resealable container. Egg bake will keep for 5-7 days when refrigerated.
