Easy Chicken Sausage and Egg Scramble with Cheese

Need to start your day with a high protein breakfast? This simple, 5 ingredient egg sausage scramble is the perfect healthy option. Made with chicken sausage and a few other ingredients, it’s made in just moments and has 33 grams of protein. Healthy, satisfying and tastes amazing!

Wondering how to make your morning eggs a little more satisfying? This simple addition of chicken sausage helps your plain ‘ole scrambled eggs go from okay to incredible.

This simple sausage egg scramble has 33 grams of protein which has numerous benefits, including helping you stay fuller, longer. Having extra protein first thing in the morning helps you stay fuller and more satiated later in the day, thus helping prevent snacking later.

When paired with fresh berries and whole grain toast, this protein and fiber rich breakfast is a great way to support your health or weight loss journey. Starting my day with extra protein and fiber is how I’ve lost over 100 lbs and have maintained that weight loss for over 8 years.

Ingredients needed to make an egg sausage scramble.

What do I need to make scrambled eggs with sausage?

  • Eggs – start with two large eggs. Any eggs – white, brown, free-range – any will work for this recipe.
  • Pre-cooked chicken sausage – I recommend buying pre cooked sausage, as this will save you time in the morning. You can find a wide variety of chicken (beef or pork) sausage in the deli section at your local grocery store.
  • Shredded cheese – I use a 2% shredded cheese, like Colby Jack or Cheddar. Feel free to use the cheese of your preference, or omit all together if you wish.
  • Milk – I prefer to use dairy milk, but you can also use any plant-based milk of your choice. I don’t recommend using a vanilla flavored milk, as the flavor will not be pleasant.
  • Non-stick spray – I like an avocado or olive oil spray. This will help prevent the eggs from sticking to the bottom of your pan.

What sausage is the best for scrambled eggs?

You can use any sausage you prefer – beef, pork, turkey or chicken. The two chicken sausages below are what I have tested this recipe with and have fantastic flavor. Both sausages are precooked and therefore require only need to be heated through when cooking.

These larger links will need to be sliced. This helps the sausage heat faster and mixes well with the eggs as they scramble.

How do I make an egg and sausage scramble?

Begin by whisking together the egg mixture. In a small mixing bowl, add the eggs, milk and salt and pepper to season, if you like. Whisk together well. The mixture should be light and slightly bubbly.

Prepare your skillet

In a small non-stick skillet, lightly spray with non-stick spray. Heat over medium heat.

Add in the sliced, pre-cooked sausage to the skillet and heat for 2-3 minutes, turning often. Reduce the heat to medium-low. To the hot skillet with the sausage, pour in the whisked egg mixture. Also add the shredded cheese.

Scramble the eggs and sausage

Using a rubber scraper, continuously scrape the sides and bottom of the pan, turning the mixture. The eggs will begin to solidify. After 1-2 minutes, the eggs will no longer be runny and begin to become fluffy.

Immediately remove from heat and transfer to a plate. Enjoy with your favorite whole grain toast, fresh berries or yogurt.

What goes with scrambled eggs and sausage?

Frequently asked questions about making scrambled eggs:

Should you cook sausage before eggs?

Yes, I would recommend cooking your sausage before you add in the eggs to be scrambled. Even if you are using precooked sausage, it will need time to heat through and need longer to cook than the eggs. If you are using uncooked sausage, definitely cook the sausage fully before adding the eggs. Follow package directions to ensure adequate cook time for the sausage you are using.

Can I use the same skillet to make sausage and scrambled eggs?

Yes, you can use the same skillet. Begin by heating the sausage first – if you are using uncooked sausage, be sure to cook fully before adding in the eggs for scrambling or frying.

Is sausage with scrambled eggs healthy?

When using a lower fat sausage, like chicken or turkey sausage, scrambled eggs with sausage can be very healthy. Is is an excellent source of protein, and the eggs offer vital nutrients, vitamins and minerals.

  • Glass Mixing Bowls
  • Small Non Stick Skillet

Ingredients
  

  • 1 2-oz. link chicken sausage pre-cooked, sliced
  • 2 large eggs
  • 2 Tablespoons milk omit if diary-free diet
  • 2 Tablespoons 2% Colby jack cheese shredded
  • non-stick avocado oil spray for pan

Instructions
 

  • Heat non-stick skillet over medium heat. Spray with non-stick spray.
  • In a medium mixing bowl, whisk together the eggs and milk with a whisk. Add in salt and pepper if you prefer. Set aside.
  • To hot skillet, add the sliced chicken sausage. Brown for 2-3 minutes to heat through, turning the sausage frequently.
  • Reduce the skillet heat to medium low. Pour the egg mixture over the hot sausage. Sprinkle with the shredded cheese. Using a rubber scraper or spatula, scrape the sides and bottom of the skillet, turning the egg and sausage mixture continuously. Once the eggs are no longer runny, and become fluffy and slightly firm, they are done. This process will take just 1-2 minutes over medium-low heat.
  • Immediately transfer scramble to a plate and enjoy right away while warm.
