These delicious Chocolate S’mores Donuts are simply baked in a donut pan, topped with a chocolate ganache frosting and sprinkled with marshmallows and graham crackers! These will be a new favorite anytime you’re in the mood for something sweet!
We are in the last few weeks of summer, and I’m feeling a little ambivalent about it. My lil’ boy (who’s not so little anymore) is going in to the second grade next week. Along with school, comes all the busy activities of fall. As much as I love fall, I feel like the summer got away from us a bit – there was baseball season, and traveling to see family, camps for Harrison and all the other things that kept us busy. I want to savor those flavors of making s’mores next to the fire pit surrounded by family and friends – these are some of our favorite summer memories. Making these Chocolate S’mores Donuts are the perfect way to keep the flavors of summer alive!
These donuts are quite simple to make. I actually adapted my recipe for Coconut Glazed Chocolate Donuts. The recipe starts with a simple devil’s food cake mix, along with buttermilk, butter and eggs. You will need at least one donut pan (I highly recommend two!). I actually have these Wilton Nonstick 6-Cavity Donut Pan pans. There are 6 donuts to a pan, and it’s nice to have an extra pan to rotate out, while the other set is baking and cooling.
Another REALLY helpful trick I’ve discovered to making donuts is adding the batter to a resealable plastic bag. Spooning the batter into the cavities, gets a bit messy and tedious, and it’s hard to get the batter even. To easily pipe the batter into the pan, cut off the corner of the bag (about 1 cm opening) and squeeze out the batter. You’ll have a perfect no-mess way to getting an even amount of batter into each donut cavity.
Once the donuts are done baking, transfer to a cooling rack. Mix up the chocolate ganache frosting to spread on to each donut, and top with graham cracker pieces and mini marshmallows. I’m actually using “marshmallow bits,” which are the extra tiny marshmallows that come in a canister. (These are located near the rest of the marshmallows at your grocery store.) If you cannot find the marshmallow bits, feel free to use regular mini marshmallow.
Not only are these donuts the perfect way to savor the fun flavors and memories of summer, they’re also a fantastic treat to go along with your hot chocolate, and would be a really fun breakfast treat to enjoy after a sleep-over with your kids and their friends.
