What do I need to make cottage cheese mousse?
- Cottage cheese – I recommend using either 2% or 4% cottage cheese, as this will help lend to the creamy texture. I don’t recommend using non-fat cottage cheese.
- Unsweetened cocoa powder – this creates the chocolate flavor in the mousse. Use a good quality cocoa powder.
- Unsweetened almond milk – You’ll need the milk to help thin out the mixture while blending. I prefer using vanilla unsweetened almond milk, however, feel free to use any dairy or plant-based milk of your choosing.
- Chia seeds – these will help thicken the mousse. When blending, the chia seeds will be broken up, but will still continue to act as the thickening agent in the mousse.
- Sweetener – I prefer to use a granular monk fruit sweetener, as this has no added sugar and has a low glycemic index. It is keto friendly and a good sweetener when you don’t want excess calories.
- Vanilla extract – the vanilla is a great way to enhance the flavor of the chocolate.
