These fluffy, delicious egg white bites include spinach, red bell pepper and cottage cheese for some extra protein. They’re the perfect make-ahead breakfast option, especially if you’re mornings are rushed and you need something that’s ready to go when you are.

What do I need to make Starbucks egg white bites?
- Liquid Egg Whites – it is more economical and less wasteful to use liquid egg whites than using the whites of whole eggs. A carton of liquid egg whites can be found at most grocery stores near the eggs.
- Cottage Cheese – this will help keep the egg bites fluffy and extra protein to each bite.
- Spinach – chopping up some fresh spinach will add some nice color and a bit of extra fiber to each bite.
- Red bell pepper – feel free to use fresh red bell pepper, or roasted red peppers that come in a jar.
- Mozzarella cheese – I used part-skim mozzarella cheese, but feel free to use full-fat. You can substitue other cheeses to meet your preferences.
- Salt and Pepper for seasoning.

How to I make Starbucks egg white bites at home?
You’ll begin by mixing together all ingredients in a mixing bowl; the liquid egg whites, cottage cheese, chopped spinach, chopped red bell peppers, cheese, salt and pepper.
Use a rubber scraper or other spoon utensil to mix the ingredients together.


What do I need to bake egg white bites?
I highly recommend using silicone baking cups that are placed in a cupcake or muffin pan. The silicone baking cups will help the egg bites bake evenly. They are also wonderfully non-stick, so the egg bites slide right out.
I do recommend spraying the baking cups with some non-stick spray to ensure the egg bites don’t stick to the silicone cups. I like this Chosen Foods Avocado Oil spray.
Ingredient Substitutions and Recommendations:
- Cheese Options – instead of mozzarella, feel free to substitute Colby Jack, Cheddar or even Feta.
- Add in a Meat – you could add in diced ham, bacon crumbles or sausage crumbles for added protein a flavor.
- Chage up the Veggies – feel free to use different vegetables, like diced broccoli, mushrooms or a onion and pepper mixture.

When kept refrigerated in an airtight container, the egg bites will keep for up to 5 days.
I would highly recommend using silicone baking cups, sprayed with non-stick spray that are placed in a cupcake pan. The silicone cups make it VERY easy for the egg bites to slide right now. They also help the egg bites cook evenly. I don’t recommend putting the batter in the pan alone. The egg mixture will stick, even with non-stick spray on the metal.
Egg bites will need to bake for 32-34 minutes at 350 degrees. Lightly shake or jiggle the pan to ensure the middle of the egg bites are set before taking them out of the oven.


How do I store egg bites?
I would recommend storing egg bites in a resealable container that is kept in the refrigerator. You could use one large container or meal prep the egg bites in individual meal prep containers paired with other breakfast ingredients.

Easy Starbucks Egg White Egg Bites Recipe
Ingredients
- 3 cups liquid egg whites
- 1 cup cottage cheese I like 2%, I don't recommend fat free
- 1 cup part-skim mozzarella cheese shredded
- 1/2 cup fresh spinach finely chopped
- 1/2 cup fresh red bell pepper finely diced
- salt and pepper to taste
Instructions
- Preheat oven to 350 degrees. Line a cupcake pan with silicone baking cups (highly recommend) and lightly spray the cups with non-stick spray. Set pan aside.
- In a mixing bowl, mix together all of the ingredients; egg whites, cottage cheese, cheese, spinach, red pepper, salt and pepper. Use a rubber scraper to mix together.
- Fill the silicone cups with the egg mixture. I used a ladle to make sure all cups had an equal amount of cheese and vegetables. Cups should be a little over 3/4 full. You will have enough egg mixture to make 18 egg bites. (Store the leftover egg mixture in the refrigerator while the first batch bakes, if you only have one pan and one set of silicone cups. Bake off the remaining egg bites after the first batch finishes baking.)
- Bake the egg bites at 350 degrees for 32-34 minutes. Egg bites will puff up slightly in the cups. Remove from the oven and let cool at least 10 minutes before handling.
