This Blueberry Coconut Mojito is an amazing cocktail perfect for sipping on a hot day!  Coconut rum along with muddled blueberries, mint leaves and coconut come together wonderfully to make this refreshing, delicious drink.  A great beverage to celebrate Cinco de Mayo, too! Do you remember the first time you tried a mojito?  For me is was several years ago, and mojitos were becoming very popular on restaurant menus.  My husband and I were at our favorite Tex-Mex place, and it was especially warm outside.  Ordering a cold, refreshing cocktail was definitely in order.   The moment the cocktail hit the table, I knew I would love it!  It's very pretty with fresh, green mint leaves, and even the look of the cocktail says "cold....refreshing...laid-back."  This is exactly what a … [Read more...]

Loaded with coconut, white chocolate chips and macadamia nuts, you won't be able to eat just one of these amazing cookies!  Cream cheese helps make these super-moist on the inside, and crisp on the outside, for the perfect cookie! When making cookies, sometimes I like to mix it up a bit.  We get a little bored with the same-old, regular cookies, so baking up something new and tasty is always fun.  I really love the flavor of white chocolate macadamia nut cookies, so I decided to take them one step further, adding sweetened flake coconut and a bit of coconut extract.  Wowwie!  I've hit the cookie jackpot - these White Chocolate Macadamia & Coconut Cookies are amazing! A couple months ago, you might remember that I made these awesome Double … [Read more...]

This coconut cream pie with meringue is the ultimate dessert for any holiday meal or celebration! The ultimate coconut cream pie recipe! Welp...I've gone and done it this time.  I'm going to disclose my mom's famous Coconut Cream Pie recipe for all of the world to see.  I may be in trouble for this one!!  Back in Burke, South Dakota my mom is an amazing baker and know for her phenomenal pies.   She can roll out a pie crust in her sleep (probably because she has many times!), and can bake up a batch of rolls like nobody's business.  Last summer she donated a few of her famous pies to the local … [Read more...]

Coconut Glazed Chocolate Donuts by Delightful E Made

  So, yes, I realize it is now January and the dead of winter.  However, it was freakin' cold here yesterday morning.  Here in the 'burbs of Northern Virginia it was 7 degrees!!  Now, granted, I grew up in the frozen tundra of South Dakota where it gets much, much colder, but for Virginia 7 degrees is COLD. So when I finally had to roll out of my toasty, warm bed (child was awake, otherwise I wouldn't have left my bed!), child asks, "Can we go to Dunkin Donuts for breakfast?"  My response, "Ummmm, NO!  Its way to cold."  My child is 5 and already knows how to play me.  He then says with a sly, overly cute grin, "But they have coffffeeeeee mommmmyyyyyyyy!"  After a good chuckle, I resisted the urge for a delicious cup of Dunkin Donuts coffee as the cold kept us inside for the … [Read more...]

The Ultimate Coconut Cupcake

06.18.2013 == 1 Comment

This weekend I planned on bringing some cupcakes to a friends house for a BBQ.  Adults and kids alike, everyone loves cupcakes.  I consulted my 5-year-old son as to what type of cupcakes we should bring - his quick reply was "coconut!" I did some searching, and came across a fabulous coconut cake recipe that I adapted for cupcakes. Recipe adapted from Broma Bakery: http://www.bromabakery.com/2010/10/best-coconut-cake-in-world.html Here is how I frosted the cupcakes.  It goes much quicker when using a piping bag, and larger tip, especially when this recipe makes nearly 36 cupcakes..  It doesn't have to be perfect (mine never are), because you'll be rolling the wet frosting into the coconut.     I hope you enjoy these cupcakes as … [Read more...]
