Made with Greek yogurt, this egg salad recipe also becomes wonderfully healthy and a great way to add some additional protein to your diet. In this egg salad tutorial, I’ll show you how to make egg salad for a sandwich or to add to lettuce leaves for healthy, low-carb Egg Salad lettuce wraps.

Here are the easy steps to making this delicious Healthy Egg Salad with Greek Yogurt:

Step 1: Cook the Hard-Boiled Eggs

The primary ingredient for any egg salad recipe are hard-boiled eggs. Making hard-boiled eggs is very simple, however, if you have not done it before, I’ll give you the simple run-down:

  1. Fill a medium sized saucepan with water nearly 2/3 full. (Don’t put the eggs in the water yet.)
  2. Bring the water to a rolling boil. 
  3. Once the water is boiling, gently place the eggs into the water.
  4. Set a timer for 12 minutes.
  5. Keeping the water at a low-boil (medium-high heat is typically best), boil the eggs for 12 minutes.
  6. Once 12 minutes is up, transfer the eggs from the saucepan to a bowl of ice water. (This will stop the cooking process, and will cool the eggs, making them easier to handle.)
  7. Once cool to the touch, you can then peel.

Pro-tip: some directions for hard boiled eggs have you placing the eggs in the water BEFORE the water boils. I DO NOT recommend this process.  The eggs become very over-cooked, dry and develop that strange green ring around the outside of the yolk. (An indication the egg is overcooked.)

Step 2: Chop the eggs

As you can see from the photo above, I have this hand-dandy egg slicer (I actually use it for strawberries, too). I’m not one for overly chopped, mushy egg salad – I like a some consistency to my egg whites. I’ve discovered that this fantastic Kitchen-Aid Egg Slicer is ideal for chopping the eggs into the perfect consistency. I  will slice the egg horizontally, then gently keeping the egg together, I will turn it 90 degrees and slice it again vertically. In just two motions I have hard-boiled eggs that are perfectly chopped.

Step 3: Add the Greek yogurt, mustard, salt and pepper and stir

To the chopped eggs, you’ll then add the plain Greek yogurt, mustard, salt and pepper. Stir this together until the eggs are nicely incorporated with the other ingredients.

I prefer to keep my egg salad recipe on the simple side, with minimal ingredients. However, here are a few other optional ingredients to add to your Healthy Egg Salad that you might enjoy:

  • Paprika
  • Garlic Powder
  • Onion Powder
  • Diced celery
  • Chopped avocado
  • Dijon mustard, instead of yellow mustard
  • A few dashes of hot sauce
  • A few dashes of Worcestershire sauce

Step 3: Add egg salad to Toast

I love to enjoy my Healthy Egg Salad with Greek yogurt a couple of different ways. The first way is to top a hearty slice of whole-grain toast. This makes for a fantastic lunch. I’ve also had this for breakfast more times than I can count. So delicious!!

Step 4: Add to fresh Romaine lettuce leaves to make lettuce wraps

Other than toast, Egg Salad Lettuce Wraps are the other way I really love to enjoy my Healthy Egg Salad. The crunchy lettuce is a fantastic low-carb option for a simple, light lunch. Top with some sliced green onions for additional flavor and crunch.

How long does this Healthy Egg Salad keep in the refrigerator?

Properly stored in an air-tight container, egg salad will keep safely in the refrigerator for 3-5 days. This is ideal, especially if you are making on the weekend for your lunches during the week.

Is plain Greek yogurt a better alternative to mayo in Egg Salad?

Yes. Plain Greek yogurt has much more protein, and is less processed than mayo. Mayo also includes oils that are not so great for you.

Is Egg Salad an economical lunch option?

Absolutely. Eggs are a very economical protein to always have on hand, with the cost of a dozen eggs averaging around $2. With the addition of the other ingredients, you can have a healthy lunch for well under $1.

Ingredients

  • 2 hard-boiled eggs, chopped
  • 1 Tbsp. yellow mustard
  • 1 Tbsp. plain Greek yogurt
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. In a bowl, add the chopped hard-boiled eggs. Add the mustard, yogurt, salt and pepper. Stir together to incorporate all ingredients.
  2. Add to bread to make an egg salad sandwich, or romaine lettuce leaves for lettuce wraps.

Notes

Be sure to NOT use vanilla yogurt. Plain Greek yogurt is recommended.
