I recently tried the NEW Peter Pan® Simply Ground Peanut Butter, which is perfectly creamy with a bit of crunch—and no artificial colors, flavors, or preservatives.  Unlike some peanut butters, there’s no need to stir before you enjoy it, which is a nice bonus!  As soon as I tried this peanut butter, I knew it would be the perfect filling for my Peanut Butter Stuffed Sandwich Cookies!

I stopped by my local Walmart where I picked up a jar of the NEW Peter Pan® Simply Ground Peanut Butter.  You can find it in the peanut butter section, near the natural peanut butters.  I was also able to get the rest of my ingredients, like dry roasted peanuts, dipping chocolate, and crackers.  Walmart really is a one-stop-shop for everything you need, especially for all of your holiday baking ingredients!

Right now you can get $.50 off One Peter Pan® Peanut Butter with this coupon at your local Walmart.

As you can see, the texture of this peanut butter is amazing!!  It’s creamy, with a bit of crunch, and perfect for spreading on toast, crackers, apples or for making your favorite PB&J sandwich!  I also really like the wide-mouth jar, as it makes it especially easy for my little guy to easily make his own peanut butter snacks and sandwiches.  I knew this would be the perfect filling for my Peanut Butter Stuffed Sandwich Cookies, as the flavor and texture of this Simply Ground Honey Roast peanut butter is the perfect compliment to the chocolate.

Peanut butter and chocolate come together for an easy, delicious treat! These no-bake cookies are super easy to make, using just a few simple ingredients and are perfect for any Christmas cookie tray, or whenever you want a savory, sweet treat!
Ingredients
  • 3/4 c. Peter Pan® Simply Ground Peanut Butter
  • 24 round crackers
  • 1/2 c. dry roasted peanuts, roughly chopped
  • white and/or dark dipping chocolate (about 8 oz. each)
Instructions
  1. Gather your ingredients, and place a large sheet of waxed paper on your flat work surface. Chop the peanuts, and melt the dipping chocolate(s) according to package directions.
  2. On a cracker, spread a tablespoon of the peanut butter onto the cracker. Top with a second cracker to make a sandwich. Dip the sandwich into the melted dipping chocolate, making sure to coat the entire surface, including sides and top. Transfer cookie to the waxed paper. While the chocolate is still wet, sprinkle the tops of the cookies with chopped peanuts, about 1-2 tsp.
  3. Let the chocolate cool and set, usually takes about 15-30 minutes. Enjoy right away, or store in an airtight container. These also freeze well to be enjoyed later.

As you can see, these cookies are super-simple.  I’ve made dozens of these cookies at one time, as they’re the perfect little snack that everyone loves!  Enjoy!  ~Erin
