In my family, Christmas Eve has just as much celebration and importance as Christmas Day. Some of my fondest memories as a child are of going to my Great-Grandma Elsie’s house to celebrate Christmas Eve with my HUGE extended family. There was always enough food to feed double the crew – Christmas cookies and candies, salads, desserts and the dinner was always soup! Soup on Christmas Eve has been a tradition in my family for as long as I can remember. With this in mind, I wanted to continue to honor those farm-fresh traditions from my family in South Dakota with a tradition that my own family can honor and enjoy on Christmas Eve here in Virginia. This Creamy Tomato & Tortellini will be a perfect fit!
To make this easy and delicious soup recipe, I stopped by my local Walmart to grab some essentials. The first stop was to grab the Hunt’s Petite Diced Tomatoes – you can find these near the pasta and sauces. Along with the tomatoes, I also grabbed a can of Hunt’s Tomato Sauce, which is a nice addition to this soup recipe.
This soup is special enough for an occasion like Christmas Eve dinner, and easy enough for a weeknight meal. This soup comes together easily with Hunt’s Petite Diced Tomatoes – the farm-fresh flavors of Hunt’s tomatoes come through in every bite of this soup. Hunt’s Tomatoes are peeled using FlashSteam instead of chemicals, which means no chemical by-products go back into the earth. It might not be the easiest way, but Hunt’s believes that it’s the right way.
Hunt’s tomatoes are grown under the warm sun of Oakdale, California—a place with some of the richest soil on earth, and some of the most dedicated farmers on earth. This tomato town is the home of Hunt’s, and since 1888, they’ve been doing tomatoes their own way. The natural way. A different way. As far as I’m concerned, these tomatoes are some of the best that can go into a meal for my family!
I love how the creamy flavors and textures of this soup are met with additional chunks of tomatoes and the tender pasta. When making this soup, I’ve pureed a large can of Hunt’s Petite Diced tomatoes, along with sauteed onions and garlic. I then add an additional 14.5 oz. can of Hunt’s Petite Diced Tomatoes, along with the tomato sauce, chicken stock, cream and some simple spices that you likely already have in your pantry. This creates the perfect soup texture – creamy along with a bit of chunky. In my opinion – the perfect tomato soup!
Once your soup is done simmering, ladle into bowls and enjoy right away. I like to top the soup with some additional Hunt’s Petite Diced Tomatoes for a pretty red pop of color, some extra Parmesan cheese, and a sprinkling of fresh basil. The red and green colors are perfect for a Christmas Eve dish!
