As soon as the weather begins to cool off a bit, I get out my crock pot and cook up a big pot of my Slow Cooker Sirloin Beef Stew. My family and I love it, as it is a delicious, hearty meal in one bowl.
I love making crock pot beef stew on a lazy Sunday afternoon and letting it simmer for hours. It fills my house with the warm aromas of autumn, and fills our bellies with a hearty, delicious meal.
What do I need to make beef stew in the crock pot?
Here’s a quick reference grocery list of the ingredients you’ll need to make this comforting, delicious beef stew recipe:
- Sirloin beef – I chose sirloin beef, as it is lean and often comes pre-cut at my grocery store. You can also use chuck roast or even brisket as these cook well at low, slow temperatures.
- Flour – flour is necessary to lightly coat the beef to brown it on the outsides.
- Salt and Pepper – for seasoning the beef while browning.
- Olive Oil – for browning the beef before adding it to the slow cooker.
- Beef Broth – I like to use a low sodium beef broth or beef stock for my soups and stews. Regular broth or stock tends to be a little salty for my taste. Low sodium or regular stock or broth will work interchangeably in this recipe.
- Russet Potatoes – great for soups and stews, Russet potatoes are ideal for this stew recipe. You could also use quartered baby red potatoes (no need to peel!) or Yukon gold potatoes.
- Yellow Onion – feel free to use a regular yellow or sweet yellow onion for this recipe.
- Carrots – regular carrots that have been peeled and cut, or baby carrots cut into bite-sized pieces work well in this recipe.
- Celery – celery is great for volume, flavor and texture in this stew recipe.
- Baby Bella Mushrooms – while absolutely delicious in this beef stew recipe, mushrooms are an optional ingredient and can be left out if you don’t like mushrooms. Feel free to choose Baby Bella or white mushrooms.
- Fresh Rosemary – a great addition for adding flavor to this beef stew. Rosemary is very complimentary with beef.
- Garlic Salt – ideal for adding flavor to the broth of the stew.

How do I make beef stew in the crock pot?
Start by prepping the beef. Trim off any excess fat and cut into small 1″ pieces.
Add the flour, salt and pepper to a shallow dish. Coat the beef pieces in the flour mixture.
Heat the oil in a skillet or Dutch oven. Add the coated meat pieces to the skillet to brown the beef.
Transfer the browned meat to the slow cooker. Add in the vegetables, potato, broth and spices. Heat on low in the slow cooker for 6-7 hours or on high for 3-4 hours.
FAQ’s about making slow cooker beef stew:
Beef stew needs approximately 3-4 hours on high, or 6-7 hours on low to cook completely.
Beef stew is done cooking when the vegetables and potatoes and tender and no longer hard, and the meat is tender.
While not 100% necessary, browning beef before adding it to a slow cooker, helps the cooking process and ensures that it is completely cooked through. If you add raw, uncooked beef to soup or stew, be sure the internal temperature of the beef is at least 165 degrees.

Slow Cooker Beef Stew

Ingredients
- 1 – 1.5 lbs. sirloin beef cut into 1″ cubes
- 3 Tablespoons all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 Tablespoons olive oil
- 1 (14.5 oz. can) beef broth
- 2 cups russet potatoes peeled and cubed (about 2 medium potatoes)
- 1 large yellow onion diced (about 1 large onion)
- 1 cup carrots peeled and sliced
- 1 cup celery diced
- 1 (8 oz. pkg.) baby bella mushrooms sliced
- 2 teaspoons fresh rosemary minced
- 1/2 teaspoon garlic salt
Instructions
- To a bowl, add the flour, salt and pepper. Stir to combine. Place the beef pieces in the flour mixture, and coat on all sides.
- In a large skillet, heat the olive oil over medium-high heat. Brown the sirloin pieces on all sides. (Note: if you have a slow cooker with a browning setting, you can do this directly in the slow cooker.)
- Transfer the browned meat to the slow cooker. Add in the beef broth, potatoes, carrots, celery, onion, mushrooms, rosemary and salt. Stir to combine.
- Place the lid on the slow cooker and set for 4-5 hours on high or 6-7 hours on low heat. The stew is done once the potatoes and carrots are fork tender.
- Ladle into bowls and enjoy right away.

I do mine without browning the meat. I simply cut the chuck roast or sirloin into larger cubes, put in the crockpot with all the veggies instead of using water I will use beef broth. I fill it until crock pot is half full. Juices from the meat will add another couple cups of liquid to the crock pot so leave room. An important step is adding about 2-3 tablespoons of worstehire sauce. After 8 hours I use two heaping spoons of corn starch, mix with – cup of water and stir in.
