Healthy Green Bean Casserole that actually tastes amazing! I’ll show you the easy steps to creating these delicious Sauteed Green Beans with Mushrooms.

Much better than anything that includes cream of whatever soup, this green been side dish recipe is absolutely delicious!

What do I need to make sauteed green beans with mushrooms?

Here’s a quick reference checklist of the ingredients you’ll need to make this simple side dish for your dinner. Note that I’m linking my favorite ingredients below for easy pick-up at Target (affiliate links.) You can get almost all food ingredients same day by doing a simple Target pick-up, drive-up order or delivery. Here’s what you’ll need:

  • Fresh green beans – you can find fresh, whole green beans, especially during the holidays, in almost all produce sections at your grocery store.
  • Fresh mushrooms – you can purchase either whole or sliced mushrooms. I like fresh baby bella mushrooms, but you can also use white or even shiitake mushrooms.
  • Shallots – shallots can be found near the onions in the produce section of the grocery store. The look like a mini red onion. If you cannot find shallots, you can substitute a red onion.
  • Cooking sherry – cooking sherry can often be found near the vinegar in the grocery store.
  • Butter – you can use either salted or unsalted butter. I prefer salted butter as it adds a nice flavor.
  • Dried Thyme – dried thyme will add an amazing herby flavor to the green beans.
  • Salt and Pepper – these are added at the very end for flavor.

How do I make sauteed green beans?

Step 1: Steam the Green Beans

In a large skillet, add the fresh, cleaned green beans to a large skillet. Add approximately 3 cups of water, and bring to a simmer. Simmer and steam for about 5 minutes over medium-heat until the green beans become a vibrant green color. The beans will be softened but still slightly firm.

How do I steam fresh green beans?

You can do it in a large skillet with water and bring to a simmer for approximately 5 minutes over medium heat. You can also use a steaming basket in a saucepan and steam the green beans until bright green, approximately 5 minutes.

Step 2: Sauté the beans, mushrooms and shallots

Drain off the water from steaming the green beans. Transfer the beans to a bowl to keep warm

In the same large skillet, add butter and sauté the mushrooms for about 5 minutes over medium-high heat.

Add the shallots and sauté for 2 more minutes, or until slightly translucent and caramelized.

Step 3: Add sherry to the mushrooms and shallots

To the mushrooms and shallots add the sherry and cook 2 more minutes. This will give the Sauteed Green Beans a great flavor and slight richness!

FAQ’s for making sauteed green beans:

What kind of mushrooms should I use in this healthy green bean casserole?

You can use simple white mushrooms, baby bella, shiitake or a blend of multiple mushrooms. Feel free to choose whatever you have access to at your local grocery store or market.

Can I use red onions for these sauteed green beans? I cannot find shallots.

Red onions are a great alternative to shallots. It will provide a similar flavor to the shallots. Slice the red onion as thin as possible.

If I add sherry, will it taste like alcohol?

You will not taste any burn of alcohol from the sherry. In fact, when cooking with sherry all of the alcohol burns off, leaving a wonderful flavor and richness that is complimentary to the green beans, mushrooms and shallots.

Can I leave out the sherry?

Yes, you can omit the sherry if you prefer to not use any alcohol in this recipe.

How do you sauté green beans?

Sauté simply means to sear food in a small amount of fat at a medium high temperature. In this instance we are searing the green beans, mushrooms and onions in butter. This give the vegetables an amazing, caramelized flavor!

Can I substitute the butter for another option to sauté?

You can use ghee, olive oil or avocado oil in place of butter. All three of these are great, healthier alternatives.

Is green bean casserole bad for you?

Because the traditional green been casserole is made with cream of mushroom soup and fried onions, it is rather unhealthy. Because both of these products are highly processed and contain large amounts of bad fats, I would recommend making this Healthy Green Bean Casserole as a healthy, more flavorful alternative.

Step 4: Add back the steamed green beans and sauté with the mushroom mixture

The last step is to add the green beans back to the skillet with the mushrooms, shallots and sherry. Add the remaining tablespoon of butter to give the beans a nice final sear. 

To season, add the thyme, salt and pepper before plating.

What makes these sauteed green beans healthy?

  • It doesn’t contain canned cream of mushroom soup.
  • It doesn’t contain canned, fried onions – very processed and unhealthy.
  • The primary ingredients in this recipe are all fresh vegetables.

  • Large Skillet This large Anolon 12" Skillet is ideal for making one-pan meals!
  • Tongs These stainless steel silicone tipped tongs by Kitchen aid are perfect for cooking with non-stick cookware!

Ingredients
  

  • 1 1/2 lb. green beans, fresh trimmed of stems
  • 10 oz. mushrooms sliced
  • 1/3 cup shallots thinly sliced
  • 1/4 cup cooking sherry
  • 3 Tablespoons butter divided
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • In a large skillet, add the trimmed green beans with approximately 3 cups of water. Over medium heat, bring to a simmer and steam the beans for 5 minutes. They will be bright green and slightly tender. Remove beans from skillet and transfer to a bowl and cover to keep warm. Drain water from skillet.
  • In same large skillet, add 2 tablespoons of butter and saute the mushrooms for approximately 5 minutes, Add the shallots and saute for 2 more minutes. Add sherry and saute for 2 more minutes, until evaporated.
  • Add the last tablespoon of butter. Add back the steamed green beans and saute for two more minutes. Season with thyme, salt and pepper.
  • Transfer to a serving plate and enjoy right away while warm.

Notes

You can use white, baby bella, shitakke, or a mushroom medley for your mushroom options.
If you cannot find shallots, you can use thinly sliced red onions.
You can substitute the butter for ghee, olive oil or avocado oil for healthier options.
