The BEST Ritz Cracker Cookies

When it comes to snacking, there is something about the combination of peanut butter and chocolate that is so satisfying and delicious!  The savory flavors of peanut butter combined with sweet, smooth chocolate and the crisp crunch of Ritz crackers is the ultimate treat.

These Chocolate Covered Ritz Cracker Cookies are not only fantastic for satisfying your sweet tooth, but a great addition to your Christmas cookie list. Because these cookies are no-bake, they’re the perfect for the busy holiday season. They’re fantastic for gifting, too!

Ingredients needed to make Ritz cracker cookies; chocolate bark, peanut butter, peanuts and Ritz crackers.

What do I need to make Ritz cookies?

Here’s a quick-reference checklist of the ingredients you’ll need to make ritz cookies:

  • Ritz crackers – these crisp, buttery crackers are the perfect size for making peanut butter sandwich cookies. These can be found in the cracker/snack aisle of your grocery store.
  • Peanut butter – I like creamy peanut butter for these, as it spreads well. You can also use chunky peanut butter if you prefer.
  • Chocolate / Almond Bark – these are ideal for melting and the perfect outer coating for these cookies. You can find both chocolate and vanilla melting chocolate in the baking section of your local grocery store. You can also find it at Target.
  • Peanuts or Sprinkles – salted peanuts are a great topping for these Ritz cookies, as it perfectly compliments the peanut butter. You can also decorate the tops with Christmas sprinkles.

How do I make Ritz cracker cookies?

Begin spreading peanut butter on a single Ritz cracker. You can use creamy or crunchy peanut butter – which ever you prefer. Use about a 1/2 tablespoon of peanut butter per cookie. Top with another cracker to make a sandwich.

Next, using a fork, drop the cracker sandwich into the melted chocolate, making sure each side is coated with chocolate. Transfer cookie to a pan lined with waxed or parchment paper.

Top cookies with peanuts or sprinkles. Allow the cookies to dry and harden at room temperature.

How do I melt chocolate in the microwave?

For best results when melting chocolate, be sure to follow the package directions for the product you’re using. Chocolate chips, baking chocolate and chocolate coating all melt differently depending on the cocoa butter content.

You can use either your microwave or a double-boiler on your stovetop. I used my microwave for melting the candy coating. I microwaved each bowl (separately) for 1 minute, stirred; then heated again for 30 seconds stirring each time.

Depending on the power setting of your microwave you may need more (or less) time. Using short melting increments is ideal for creating a smoothly melted chocolate. Overheating will create dry, crumbly and unusable chocolate so do your best not to overcook.

Toppings for peanut butter Ritz cookies

There are numerous topping options for these Ritz cookies. Decorating with red and green sprinkles is great as a Christmas cookie. Here are some other ideas that are great for these cookies:

  • Red White and Blue Patriotic Sprinkles for a July 4th holiday or cookout.
  • Rainbow sprinkles for a birthday party.
  • Pink or Blue sprinkles for a baby shower.
  • School colors for a graduation party
  • Nuts: sliced almonds, peanuts or chopped pecans are another great topping.

Equipment

  • Glass Mixing Bowls Ideal for cooking and baking, and great for anything that needs to go into a microwave.
  • Rubber Scrapers These Cuisinart rubber scraper spatulas are fantastic for fillings, batters, and so much more!
  • Parchment Paper Sheets These pre-cut parchment paper sheets are super convenient and the perfect size for lining a loaf pan.

Ingredients
  

  • 3/4 cup peanut butter creamy or crunchy
  • 24 Ritz crackers
  • 1/2 cup dry roasted peanuts roughly chopped
  • 1 (16 oz. pkg) chocolate candy coating white or chocolate

Instructions
 

  • Gather your ingredients, and place a large sheet of waxed paper on your flat work surface. Chop the peanuts, and melt the dipping chocolate(s) according to package directions.
  • On a cracker, spread a tablespoon of the peanut butter onto the cracker. Top with a second cracker to make a sandwich. Dip the sandwich into the melted dipping chocolate, making sure to coat the entire surface, including sides and top. Transfer cookie to the waxed paper. While the chocolate is still wet, sprinkle the tops of the cookies with chopped peanuts, about 1-2 tsp.
  • Let the chocolate cool and set, usually takes about 15-30 minutes. Enjoy right away, or store in an airtight container. These also freeze well to be enjoyed later.

Notes

Instead of peanuts, feel free to sprinkle seasonal sprinkles on top of the cookies. You can easily find seasonal sprinkles for Christmas, Valetine’s Day, Easter, July 4th and Halloween.

    I was shopping at Aldi’s the other day and ran across a specialty limited edition Jiff peanut butter that was just AWESOME. It is Jiff Whipped Pumpkin Pie Spice Peanut Butter and the flavor is the best I have ever tasted..going to make some of these little cookies with it and will let you know how it turns out.
