Made with a delicious sour cream sauce, along with sauteed mushrooms and chicken thighs, this recipe comes together in less than 30 minutes.

What do I need to make chicken mushroom pasta?
Here’s a quick-reference check list of the ingredients you’ll need for making this chicken recipe:
- Penne pasta – penne is great for this sauce, however, if you have other medium-sized, short pasta, these can be used as well. Pasta like ziti, rigatoni, farfalle or rotini are all good options.
- Olive oil – will be needed for sautéing the chicken and mushrooms.
- Chicken thighs – I like using chicken thighs in this recipe, as they are more juicy and flavorful compared to chicken breast meat. If you would prefer chicken breasts, you can certainly make that substitution.
- Mushrooms – I used Baby Bella mushrooms, however you could also use white or shiitake mushrooms.
- Sour cream – this will be the base for the creamy mushroom sauce. You could also use creme fraiche.
- Butter – this will be needed to make a roux to be used for the sauce.
- Flour – the thickening agent used for making the roux.
- Chicken broth – used for creating the mushroom sauce. You could also use chicken stock.
- Worcestershire sauce – great for adding flavor and richness to the creamy mushroom sauce.
- Seasoning – you’ll need garlic salt, onion powder, paprika and black pepper. These will be used for seasoning the chicken.

How do you make creamy chicken and mushroom pasta?
Begin by trimming and cutting the chicken thighs into pieces. You can cut into medallions or smaller bite-sized chunks. Sprinkle the chicken with the seasoning mixture of pepper, paprika, onion powder and garlic salt.
Add the olive oil to a skillet that has been heated to medium-high heat. Let the chicken pieces sauté for approximately 5-6 minutes per side.
How do I know when the chicken is done cooking?
To ensure your chicken is cooked through, it’s helpful to use an instant-read digital meat thermometer. I really like my ThermaPen Instant Read Digital Thermometer. The internal temperature of chicken thigh meat will need to be at 165 degrees.
Once the chicken is fully cooked through, transfer the chicken pieces to a bowl and cover to keep warm.

In the same skillet that you cooked the chicken in, add the last of the olive oil and heat on medium-high heat. Add the sliced mushrooms, and sauté until they become tender and slightly browned.
Transfer the mushrooms to the bowl with the chicken to keep warm.


How do you make a good creamy mushrooms sauce?
- Start by making a roux (1:1 ratio of flour and butter). Cook in the skillet for approximately 2 minutes.
- Add the chicken broth and whisk together. Bring to a low simmer and cook until slightly thickened.
- Add the sour cream and Worcestershire sauce and whisk to combine. Mixture will be creamy. Season with salt and pepper.
- Add in the sautéed mushrooms and chicken, reduce the heat to low and bring back to simmer.
I use a similar of making a roux base for my Creamy Orzo with Chicken and my Creamy Pesto Pasta with Scallops.
Once you’ve added the mushrooms and chicken into the sauce, the cooked pasta can also be added. Stir together to coat the pasta well.

Creamy Pasta with Chicken and Mushrooms
Equipment

Ingredients
- 1 (16 oz. box) penne rigate pasta cooked to al dente
- 1 1/2 lbs. chicken thighs boneless, skinless, cut into pieces
- 8 oz. mushrooms sliced, baby bella or white
- 4 Tablespoons olive oil divided
Seasoning for Chicken:
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground pepper
- 1/2 teaspoon paprika
For creamy sour cream sauce:
- 4 Tablespoons butter
- 4 Tablespoons flour
- 1 (14.5 oz. can) chicken broth
- 1 1/4 cup sour cream
- 3 Tablespoons Worcestershire sauce
- salt and pepper to taste
Instructions
- In a large stock pot or Dutch oven, begin heating water to cook the pasta. When a rolling boil is reached, pour the pasta into the water and cook penne to al dente, about 10-11 minutes, or per the cook time listed on the package.
- While the water and pasta cook, heat a large skillet over medium-high heat. Add the chicken thigh pieces, and cook for 5-6 minutes per side until completely cooked through. Remove from skillet and transfer to a bowl. Cover with foil to keep warm.
- In the same skillet, over medium-high heat, add the sliced mushrooms. Cook approximately 4-5 minutes or until tender and browned. Transfer the mushrooms to the bowl with the chicken and cover to keep warm.
- In the same skillet, add the butter, and melt over medium heat. Add the flour, and whisk to combine. Cook for about 2 minutes. Add the chicken broth and continue whisking until the broth comes to a simmer and thickens. Add the sour cream and Worcestershire sauce and whisk to combine. Cook for 2 more minutes until thick and creamy.
- Add the sauteed chicken and mushrooms to the sauce and stir together to combine into the sauce. Add the cooked pasta to the sauce and stir to combine. Serve right away.
