What do I need to make garlic parmesan chicken?
- Boneless chicken breasts – chicken breasts are great for cutting into pieces and baking. You can also use boneless, skinless chicken thighs.
- Red potatoes – baby, or regular red potatoes are great for cutting and baking. No need to peel, these potatoes are sweet and roast well with the skin on.
- Minced garlic – to save time I like to use jarred minced garlic. You can also peel and mince cloves of garlic.
- Grated parmesan cheese – this can be found in the grocery store near the Italian foods, and also near the shredded cheeses. It is a shelf-stable product that does not need refrigeration. You could also grate a wedge of parmesan cheese.
- Olive oil – ideal for roasting the potatoes and chicken, the olive oil will prevent these items from sticking to your sheet pan. You could also use avocado oil in place of olive oil.

How do I make garlic parmesan chicken and potatoes in the oven?
Begin by measuring out your spices into a small bowl. Stir the spices together, then divide evenly into two separate portions (about 1 tablespoon for each portion.) One portion of the spices will go on the potatoes, the other portion will go on the chicken.
What potatoes are best for roasting with chicken?
Either red potatoes or Yukon gold potatoes are ideal for roasting with chicken. These potatoes are more firm than regular Russet potatoes and will hold their shape when roasted. These potatoes are also sweeter, which is ideal for roasting.
Cut the potatoes into small bite-sized pieces, about 1″ – 1 1/2″ inches. Add the potatoes to a mixing bowl and top with olive oil, garlic, parmesan cheese and one portion of the spices.
Mix together with a rubber scraper to coat the potatoes evenly.

Can I bake chicken and potatoes on the same pan?
When baking chicken and potatoes together on the same pan, you’ll need to bake the potatoes longer. Potatoes will need about 25-30 minutes to soften and cook through, whereas chicken will only need about 20 minutes to cook through.
I recommend baking the potatoes first for 15 minutes, then add the chicken and continue to bake for another 20 minutes. This will allow the potatoes to bake and soften without overcooking the chicken.
What temperature do I bake chicken and potatoes?
For best results, chicken and potatoes will cook evenly at 400 degrees in the oven. This tends to be the best temperature to cook the chicken without overcooking or drying it out.

Garlic Parmesan Chicken and Potatoes

Ingredients
Spice Mix:
- 2 teaspoons paprika
- 2 teaspoons dried parsley
- 1 1/2 teaspoons garlic salt
- 1 teaspoon onion powder
- 1 teaspoon ground pepper
Chicken and Potatoes:
- 1 1/2 lbs. chicken breasts, boneless skinless cut into 1" pieces
- 24 oz. red potatoes cut into 1" cubes
- 4 Tablespoons grated parmesan cheese divided
- 2 Tablespoons minced garlic divided
- 2 Tablespoons olive oil divided
Instructions
- Preheat oven to 400 degrees. Lightly spray a large sheet pan with non-stick cooking spray. Set prepared pan aside.
Spice Mixture:
- In a small bowl, add the spices; paprika, garlic salt, onion powder, parsley, and ground pepper. Mix together. Evenly divide the spice mixture (about 1 tablespoon) into two separate portions. One portion will be for the potatoes and the other will be reserved for the chicken.
For the potatoes:
- To a mixing bowl, add the cut potatoes, 2 tablespoons of the grated parmesan cheese, 1 tablespoon of olive oil, 1 tablespoon minced garlic and 1 tablespoon of the spice mixture (making sure to reserve the remaining spices for the chicken.) Using a rubber scraper, mix the potatoes to evenly coat the potatoes.
- Pour the potato mixture on the prepared sheet pan. Keep the potatoes on one side of the pan, reserving space for the chicken to go on later. Roast the potatoes at 400 degrees for 15 minutes. (The potatoes need extra time to cook, so they go into the oven first.)
For the chicken:
- While the potatoes pre-cook, mix together the chicken. To a mixing bowl, add the cut chicken pieces. To the chicken, add the remaining 1 tablespoon of olive oil, 2 tablespoons of parmesan cheese, 1 tablespoon of garlic and remaining tablespoon of the spice mixture. Stir together with a rubber scraper to coat the chicken evenly.
- Once the potatoes have cooked for 15 minutes, remove the pan from the oven and add the coated chicken pieces to the other side of the pan. Return the pan to the oven and cook the potatoes and chicken for 20 minutes.
- Once done baking, remove from oven and let cool for 5-10 minutes before serving.
