Do you ever struggle with what to have for lunch? I’m one of those people that always needs new ideas, as I get very bored with the same old sandwich. I typically have a quick breakfast and coffee in the morning before going to the gym. Once shower up, and work for a couple hours, my tummy is grumbling.
If I don’t have a smart lunch made in advance, I tend to make poor nutritional choices. I love salads for lunch, but I don’t always have the time to prepare them once lunchtime rolls around. I’ve come up with a quick, healthy and delicious way to enjoy salad by making these Honey Crisp Apple & Sweet Kale Salad jars in advance.

One of my favorites is the Sweet Kale Vegetable Salad kit – it includes kale, brussel sprouts, cabbage, chicory and dried cranberries and pumpkin seeds. I love these Eat Smart Salad kits because they have a great mix of ingredients that makes for the perfect salad base. To the Sweet Kale salad mix, I also added chicken, chopped honey crisp apples, goat cheese and an apple cider vinaigrette to create a fantastically fresh salad that’s full of fall flavors.
Assembling these salad jars in advance is the perfect way to make smart lunch choices. Putting the ingredients in a specific order is key to keeping your salad fresh and crisp without getting soggy from the dressing. The first thing you start with is the dressing at the bottom.
I then add diced rotisserie chicken and chopped honey crisp apples. I then add the goat cheese crumbles, pumpkin seeds and dried cranberries. I then fill the rest of the jar with the Sweet Kale salad mix.

Honey Crisp Apple & Sweet Kale Salad

Ingredients
- 1 package Eat Smart Sweet Kale Vegetable Salad mix
- 1 1/2 c. cooked, rotisserie chicken
- 2 honey crisp apples, cored and chopped
- 3 Tbsp. goat cheese crumbles
- 3 Tbsp. dried cranberries
- 3 Tbsp. roasted pumpkin seeds
Apple Cider Vinaigrette:
- 3/4 c. apple cider
- 3 Tbsp. olive oil
- 1 Tbsp. dijon mustard
- 2 cloves garlic, minced
- salt and pepper to taste
Instructions
- Prior to assembling the salad jars, mix the dressing by whisking together the apple cider, olive oil, mustard, garlic, salt and pepper.
- With three quart sized mason jars, pour the dressing between the three jars (about 1/3 cup of dressing per jar.) Next add the chopped chicken, then add about 1/3 of the chopped apples to each of the jars. Then, add the goat cheese crumbles, pumpkin seeds and the dried cranberries. Then fill the rest of the jars with the Sweet Kale salad mix. Close the jars with lids and refrigerate.
- Salads will keep for up to 5 days.
