Could you use a new idea for a salad with grilled chicken? Many of us end up making the same salads over and over again…salad greens, grilled chicken, tomatoes, and dressing…on repeat, over and over again.
This chicken and mango salad is a great way to mix it up and add a new salad option to your routine. By simply adding some flavorful ingredients, like mango, crisp cucumber, red onion and avocado you can totally change up the flavor profile of your salad.
In this post I’ll show you how to easily assemble this mango chicken salad, what ingredients you’ll need and how to prep it for your work day if you’re taking it with you for lunch.
What do I need to make mango salad with chicken?
Here’s a quick-reference check list of the ingredients you’ll need for making a mango and chicken salad:
- Romaine Lettuce, or your preferred salad greens – I chose romaine for this salad, but feel free to use spring mix, red leaf, spinach, or even chopped kale.
- Fresh mango – mango is the star of the show in this salad. Mango can typically found year-round in the produce section of the grocery store. Choose a mango that is slightly soft (but not mushy) to the touch. A very firm, hard mango will likely be unripe.
- Avocado – often considered a super-food, avocado is a great way to add good fats to your diet. It will also provide your salad with some pleasant creaminess alongside the crunch of the other ingredients.
- Cucumbers – go with seedless cucumbers, as these don’t need to be peeled. Simply rinse, slice and add to your salad.
- Tomatoes – I chose cherry tomatoes, but feel free to add any variety of tomatoes that you enjoy.
- Red onion – a thinly sliced red onion will give this salad some zesty flavor and crunch. I personally love adding my quick pickled red onion to all my salads.
- Goat Cheese Crumbles – these are optional, but a wonderful addition. Goat cheese is a very mild soft cheese, and will add some pleasant creaminess to your salad.
- Sliced Almonds – these add a great crunch to your salad. You could also substitute walnuts, toasted pecans or pistachios for the almonds.
- Balsamic Grilled Chicken – I added my Brown Sugar Balsamic Grilled Chicken to this salad, which is the perfect flavor to the salad.

How do I make chicken and mango salad?
To make this salad, start with your salad greens on the bottom of a large bowl. Add in the mango, avocado, onions, cucumber, tomatoes and almonds. Toss the salad together well.
Just before serving, add the grilled chicken, goat cheese crumbles and dressing.
What type of chicken is best on a salad?
Marinated and grilled chicken is ideal for pairing with a salad. Many prefer boneless, skinless chicken breasts, but boneless, skinless chicken thighs are also a great option.
Once the chicken is cooked, slice and let cool slightly before adding to a salad. Cold chicken that has been refrigerated (leftover chicken) is ideal for pairing with a salad.
This Brown Sugar Balsamic Grilled Chicken is the perfect pairing for this mango chicken salad. The marinade is sweet and tangy, and provides a great, complimentary flavor to the salad ingredients.

Chicken and Mango Salad

Ingredients
- 5 cups romaine lettuce roughly chopped
- 1 cup fresh mango chopped
- 3/4 cup cherry tomatoes halved
- 1 avocado diced
- 1/2 cup red onion thinly sliced
- 1/3 cup sliced almonds
- 1/3 cup goat cheese crumbles optional
- 16 oz. grilled chicken like my Brown Sugar Balsamic Grilled Chicken
- 1/2 cup honey balsamic dressing
Instructions
- To a large bowl or dinner plates, add the salad greens. To the greens add the mango, avocado, tomatoes, onion, cucumber and sliced almonds.
- When ready to serve the salad, top with the grilled chicken, goat cheese crumbles and dressing. Toss together to coat all ingredients with the dressing. Enjoy right away.
Prepping Salad In Advance:
- If meal prepping this salad (salads in individual containers), add all ingredients to the meal prep containers, keeping the chicken, almonds and goat cheese crumbles on top. Store the dressing in a small individual container, keeping it separated from the salad. Add the dressing and toss together just before eating.
