Yes, you certainly can! Sirloin makes a leaner beef stew with great beefy flavor. Because it has less fat and connective tissue than chuck roast, cut it into 1-inch cubes, brown it well, and cook it on LOW so it turns tender without drying out.
As soon as the weather begins to cool off a bit, I get out my crock pot and cook up a big pot of my Slow Cooker Sirloin Beef Stew. My family and I love it, as it is a delicious, hearty meal in one bowl.
I love making crock pot beef stew on a lazy Sunday afternoon and letting it simmer for hours. It fills my house with the warm aromas of autumn, and fills our bellies with a hearty, delicious meal.
Which Sirloin to Buy for Stew
There are a few options for buying sirloin at the grocery store: top sirloin, sirloin tips and packages labeled “sirloin stew meat” or “sirloin tips.” I personally choose the pre-cut packages of sirloin stew meat, as this has already been trimmed of excess fat which helps save prep time. The down-side of buying the packages of sirloin stew meat is it is a little more expensive. To save money, you can buy a whole top sirloin, and trim and cube it at home. It’s less expensive, but will take more time to prep.
What do I need to make beef stew in the crock pot?
Here’s a quick reference grocery list of the ingredients you’ll need to make this comforting, delicious beef stew recipe:
- Sirloin beef – I chose sirloin beef, as it is lean and often comes pre-cut at my grocery store. You can also use chuck roast or even brisket as these cook well at low, slow temperatures.
- Flour – flour is necessary to lightly coat the beef to brown it on the outsides.
- Salt and Pepper – for seasoning the beef while browning.
- Olive Oil – for browning the beef before adding it to the slow cooker.
- Beef Broth – I like to use a low sodium beef broth or beef stock for my soups and stews. Regular broth or stock tends to be a little salty for my taste. Low sodium or regular stock or broth will work interchangeably in this recipe.
- Russet Potatoes – great for soups and stews, Russet potatoes are ideal for this stew recipe. You could also use quartered baby red potatoes (no need to peel!) or Yukon gold potatoes.
- Yellow Onion – feel free to use a regular yellow or sweet yellow onion for this recipe.
- Carrots – regular carrots that have been peeled and cut, or baby carrots cut into bite-sized pieces work well in this recipe.
- Celery – celery is great for volume, flavor and texture in this stew recipe.
- Baby Bella Mushrooms – while absolutely delicious in this beef stew recipe, mushrooms are an optional ingredient and can be left out if you don’t like mushrooms. Feel free to choose Baby Bella or white mushrooms.
- Fresh Rosemary – a great addition for adding flavor to this beef stew. Rosemary is very complimentary with beef.
- Garlic Salt – ideal for adding flavor to the broth of the stew.

There are advantages for both sirloin and chuck roast for making beef stew. While sirloin is more lean and slightly higher in protein, chuck roast will have more fat marbling, therfore cook with more tender texture.

How do I make beef stew in the crock pot?
Start by prepping the beef. Trim off any excess fat and cut into small 1″ pieces.
Add the flour, salt and pepper to a shallow dish. Coat the beef pieces in the flour mixture.
Heat the oil in a skillet or Dutch oven. Add the coated meat pieces to the skillet to brown the beef.
Transfer the browned meat to the slow cooker. Add in the vegetables, potato, broth and spices. Heat on low in the slow cooker for 6-7 hours or on high for 3-4 hours.

How to Keep Sirloin Tender in the Slow Cooker
There are a number of ways to keep sirloin tender in your slow cooker. Here’s what I would recommend:
- Pat the meat dry with paper towels. Dredge in a light coating of flour, salt and pepper, making sure to shake off any excess flour. This dredging will help create a nice seared outer surface of the meat, keeping it tender on the inside. The flour will also create a thicker broth.
- Dredge and brown in smaller batches. When the meat is less crowded in the pan it will cook more evenly.
- Use the Low setting on your slow cooker, and avoid the High setting if you can. The lower setting will allow the meat to cook slowly, thus keeping it more tender and juicy.
- Adding Worcestershire or tomato paste to your broth will give the meat a depth of flavor, keeping it tender and flavorful.

Beef stew needs approximately 3-4 hours on high, or 6-8 hours on low to cook completely.
Beef stew is done cooking when the vegetables and potatoes and tender and no longer hard, and the meat is tender.
While not 100% necessary, browning beef before adding it to a slow cooker, helps create savory outer edges of stew meat. The flour used with the meat also creates a thicker broth for the stew. If you add raw, uncooked beef to soup or stew, be sure the internal temperature of the beef is at least 145 degrees before serving.

To thicken your broth, I recommend making a slurry. A slurry is made with the stew broth and corn starch. To make the slurry take out about 1/2 – 3/4 cup of broth to a small bowl. Whisk in 1 tablespoon of cornstarch into the broth, making sure it is well incorporated and no lumps of corn starch remain. Pour the slurry back into the stew and stir well to combine. The broth will begin to thicken.
How to Store and Freeze Beef Stew
Beef stew is one of those dishes that tastes even better the second time around. To store your leftovers, let the stew cool to room temperature. Transfer the stew to a resealable container and refrigerate. The stew will keep for up to 5 days refrigerated. To reheat the stew, add a serving to a microwave safew bowl. Reheat on high for 1 minute increments, stopping to stir. A serving will need 2-3 minutes to reheat to steaming.
Beef stew can be frozen and enjoyed later. Transfer the cooled stew to a freezer safe container that has a tight fitting lid. Frozen beef stew will keep for up to 3 months. You can also freeze individual servings of beef stew in freezer-safe meal prep containers. To thaw, place the stew in the refrigerator overnight. The frozen stew can be reheated in a saucepan on your stovetop over medium-low heat.

Ingredients
- 1 – 1.5 lbs. sirloin beef cut into 1″ cubes
- 3 Tablespoons all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 Tablespoons olive oil
- 1 (14.5 oz. can) beef broth
- 2 cups russet potatoes peeled and cubed (about 2 medium potatoes)
- 1 large yellow onion diced (about 1 large onion)
- 1 cup carrots peeled and sliced
- 1 cup celery diced
- 1 (8 oz. pkg.) baby bella mushrooms sliced
- 2 teaspoons fresh rosemary minced
- 1/2 teaspoon garlic salt
Instructions
- To a bowl, add the flour, salt and pepper. Stir to combine. Place the beef pieces in the flour mixture, and coat on all sides. Remove the beef pieces from the flour mixture and shake off any excess flour.
- In a large skillet, heat the olive oil over medium-high heat. Brown the sirloin pieces on all sides. (Note: if you have a slow cooker with a browning setting, you can do this directly in the slow cooker.)
- Transfer the browned meat to the slow cooker. Add in the beef broth, potatoes, carrots, celery, onion, mushrooms, rosemary and salt. Stir to combine.
- Place the lid on the slow cooker and set for 3-4 hours on high or 6-8 hours on low heat. The stew is done once the potatoes and carrots are fork tender.
- Ladle into bowls and enjoy right away.

I do mine without browning the meat. I simply cut the chuck roast or sirloin into larger cubes, put in the crockpot with all the veggies instead of using water I will use beef broth. I fill it until crock pot is half full. Juices from the meat will add another couple cups of liquid to the crock pot so leave room. An important step is adding about 2-3 tablespoons of worstehire sauce. After 8 hours I use two heaping spoons of corn starch, mix with – cup of water and stir in.
