Looking for a super simple dinner idea? Do you and your kids love tacos, but want a new way to enjoy them? These beef quesadilla tacos are the perfect option.

Made with just tortillas, cheese and seasoned ground beef, this beef quesadilla recipe can be super versatile by adding your favorite Tex-Mex toppings, dips and sides.

In this post I’ll show you how to make quesadillas, what ingredients you’ll need to make them, and different ideas for toppings, dips and sides.

Ingredients needed to make beef quesadillas; seasoned ground beef, shredded cheese and a package of flour tortillas.

What do I need to make ground beef quesadillas?

  • Seasoned ground beef – many people call this “taco meat” as it consists of browned ground beef mixed with taco seasoning.
  • Tortillas – I recommend using a medium-sized (soft-taco size) flour tortilla. Once cooked they become perfect crisp and slightly browned on the outside.
  • Shredded cheese – I recommend using a Colby Jack blend, but you can also substitute a cheddar blend or Mexican blend shredded cheese. To save time I prefer to buy pre-shredded cheese, but you can also shred your own cheeses.

For exact ingredient amounts and full recipe instructions be sure to scroll down to the bottom of the post for the recipe. Thanks!

How do I make taco meat?

Making seasoned ground beef is quick and simple. Start by browning 1 – 11/2 lbs of ground beef in a large skillet. Drain off any excess fat that is rendered.

To the browned ground beef, add in taco seasoning, water and tomato paste. Heat on medium-low and bring to a simmer, combining all ingredients. You can get the full recipe and directions for making taco ground beef here.

To make a beef quesadilla, begin by adding a flour tortilla to the bottom of a large skillet heated over medium heat.

To the top of the tortilla, add the seasoned ground beef and shredded cheese. Add another flour tortilla to the top of the cheese and beef. Heat for 3-4 minutes or until the cheese has melted slightly.

Frequently asked questions about making quesadilla tacos:

What type of meat is best for a quesadilla?

The type of meat used in a quesadilla is primarily based on personal taste. Many people enjoy shredded or grilled chicken in a quesadilla, others prefer seasoned ground beef, or even shredded beef.

What cheese is best in a quesadilla?

A blend of shredded cheddar, Jack and Colby cheeses is ideal for a quesadilla. A blend of cheeses is ideal for flavor, however, if you have only one type of cheese it will certainly work for melting inside the tortillas.

How long do I cook a quesadilla?

A quesadilla needs around 3-5 minutes per side, on medium heat to cook. Be sure to flip the quesadilla over to cook on both sides of the quesadilla for the meat and cheese to cook and for the tortilla to toast and become crispy.

What other meat can I use in a quesadilla?

Storage: Store any leftover quesadillas in an airtight container in the refrigerator. Quesadillas will keep for up to 5 days refrigerated.
Reheating: Reheat in a toaster oven or in a hot skillet for a few minutes on each side over medium heat. Microwaving will cause the quesadillas to become very soggy.
