Chocolate and coconut. There are few other food combinations that I love more than these. When I was a kid, my mom would make home made almond joys at Christmas time to put on her Christmas candy tray. I fell in love. Ever since then, I have loved Mounds, Almond Joys, and especially any home made cookie, bar, pie or cake that includes chocolate and coconut. These Chocolate Coconut cupcakes easily make the top of my Chocolate-Coconut list of favorites.
A couple days ago I asked my husband if he would like me to bring in cupcakes to his workplace for his 40th birthday. Not only did he happily agree, but he specifically requested these. He said these are quite possibly the best thing I’ve ever baked!! Given that I bake at least once a week, speaks highly for these yummy cupcakes.
I came across this recipe a few months ago, by Lizzy Early, the author of the fabulous blog “Your Cup of Cake”. If you love cupcakes, you MUST visit her blog and follow all of her great creations at www.yourcupofcake.com
The recipe is quite easy and uses a box cake mix. It call for additional ingredients like sour cream, buttermilk, and vanilla in addition to the standard box mix add-in’s (ie, eggs and oil). The addition of the sour cream and buttermilk ensure that your cupcakes are moist and rich. (There is nothing I dislike more than a dry cupcake.)
As you can see, the cupcakes bake beautifully.
The frosting is fabulous! The butter, cream cheese, and coconut extract along with the powdered sugar and vanilla come together perfectly. Be sure to let your butter and cream cheese come to room temperature to ensure a creamy, lump-free frosting. I actually added 1 cup of flake coconut to the frosting in addition to rolling the top of the frosted cupcake in coconut. It delivers a extra shot of coconut that will make everyone ask for seconds. (Note: If you are piping the frosting onto the cupcakes, omit the coconut and just roll it on the tops at the end. The coconut will clog your piping tip, and you’ll end up with a mess.)
