In this post I’ll show you how to make quesadillas, what ingredients you’ll need to make them, and different ideas for toppings, dips and sides.
What do I need to make ground beef quesadillas?
- Seasoned ground beef – many people call this “taco meat” as it consists of browned ground beef mixed with taco seasoning.
- Tortillas – I recommend using a medium-sized (soft-taco size) flour tortilla. Once cooked they become perfect crisp and slightly browned on the outside.
- Shredded cheese – I recommend using a Colby Jack blend, but you can also substitute a cheddar blend or Mexican blend shredded cheese. To save time I prefer to buy pre-shredded cheese, but you can also shred your own cheeses.

How do I make taco meat?
Making seasoned ground beef is quick and simple. Start by browning 1 – 11/2 lbs of ground beef in a large skillet. Drain off any excess fat that is rendered.
To the browned ground beef, add in taco seasoning, water and tomato paste. Heat on medium-low and bring to a simmer, combining all ingredients. You can get the full recipe and directions for making taco ground beef here.

How do I make ground beef quesadillas?
To make a beef quesadilla, begin by adding a flour tortilla to the bottom of a large skillet heated over medium heat.
To the top of the tortilla, add the seasoned ground beef and shredded cheese. Add another flour tortilla to the top of the cheese and beef. Heat for 3-4 minutes or until the cheese has melted slightly.
Using a large spatula, flip the quesadilla over to toast on the other tortilla. Heat for another 3-4 minutes.
Transfer the cooked quesadilla to a cutting board. Using a sharp knife, cut into quarters. Enjoy your quesadilla with your preferred toppings, dips and sides.

A blend of shredded cheddar, Jack and Colby cheeses is ideal for a quesadilla. A blend of cheeses is ideal for flavor, however, if you have only one type of cheese it will certainly work for melting inside the tortillas.
A quesadilla needs around 3-5 minutes per side, on medium heat to cook. Be sure to flip the quesadilla over to cook on both sides of the quesadilla for the meat and cheese to cook and for the tortilla to toast and become crispy.

Beef Quesadilla Tacos
Equipment
- Large Skillet This large Anolon 12" Skillet is ideal for making one-pan meals!
- Large Spatula Great for making quesadillas, pancakes, French toast and much more. A super useful kitchen utensil!
Ingredients
- 2 flour tortillas medium, soft taco size
- 1/2 cup seasoned ground beef
- 1/4 cup shredded Colby Jack cheese
Instructions
- Heat a large skillet over medium heat. Add one of the tortillas to the center of the skillet. Add the warm seasoned ground beef to the top of the tortilla. Evenly sprinkle the shredded cheese over the top of the ground beef.
- Place the second tortilla over the top of the ground beef and cheese. Heat for 3-5 minutes on the first side.
- Using a large spatula, flip the quesadilla over to the other side. Cook on the opposite side for another 3-5 minute for the cheese to melt and for the tortilla to become crispy.
- Once done, transfer to a cutting board and slice into quarters. Enjoy right away while warm. Top with your favorite Tex-Mex toppings and dips.
