Healthy Shrimp Tacos with Chili Lime Shrimp
These Healthy Shrimp Tacos are going to be your new favorite Taco Tuesday recipe! Made with Chili Lime Shrimp and fresh, delicious toppings like red cabbage, pico de gallo salsa, avocados, and sour cream, these tacos are a fantastic healthy option. Fresh, flavorful and completely delicious!
If someone tells you that all tacos are terrible for you, immediately question their intentions! You do not need that kind of negativity in your life. The fact of the matter is, when you use the right ingredients and keep your portions in check, tacos can be wonderfully healthy and a great dinner or lunch option.
Here’s how you make these Healthy Shrimp Tacos with Chili Lime Shrimp:
Step 1: Make the Chili Lime Shrimp
The first thing you’ll need to do is make the chili lime shrimp. Shrimp is a fantastic lean protein, and tastes amazing in tacos. I typically buy frozen, raw shrimp. I wouldn’t recommend buying cooked shrimp, and they tend to get very tough and chewy after recooking.
Add the juice of 2 limes to a pound of raw shrimp. Let the lime juice sit on the shrimp for several minutes (10-30 minutes). I will often chop my other ingredients while the shrimp marinate in the lime juice.
In a small bowl, combine your spices – chili powder, cumin, garlic salt and pepper.
Heat a skillet with olive oil, and add the shrimp. While they cook on one side, sprinkle with half of the seasoning. Cook for about 3 minutes on the first side, then flip over, and sprinkle with the remaining seasoning.
Step 2: Mix together the Pico de Gallo Salsa
Pico de Gallo Salsa is my preferred salsa for these tacos. It’s simple, flavorful and is very complimentary to the chili lime shrimp.

Step 3: Toast the tortillas
Just before you assemble your tacos, I highly recommend toasting or warming your tortillas. Warm tortillas help keep the tortillas from tearing or splitting, but also provide a pleasant receptacle for your filling.
Are corn or flour tortillas better for you?
Corn tortillas are made with whole grains, and have a few less calories than flour tortillas. Flour tortillas are made with processed flour, which is a complex carbohydrate, and therefor a little more difficult to digest. If you have the option, chose corn tortillas for a slightly healthier alternative.
How do you toast tortillas?
On an open-flame, gas stove top, simply place the corn tortilla directly on the open flame (medium-low flame/temperature). Using metal tongs, continually move the tortillas. Once slightly toasted and charred, flip the tortilla and repeat the processes. This goes quickly, as you’ll need only 30 seconds per side. If you do not have a gas stove top, you can replicate this process on a dry, hot skillet.
Step 4: Assemble the Shrimp Tacos
Once you’ve toasted the tortillas, start assembling the tacos with the pico de gallo, red cabbage and avocado. Then, place the chili lime shrimp on the toppings.

I personally feel that sour cream is a must on tacos. You can achieve this sour cream drizzle by placing sour cream into a resealable plastic bag. Seal, then cut off the tip of the bag. Much like a piping bag, drizzle the sour cream over the top of the tacos. You don’t need much to achieve the delicious, creamy texture.

Healthy Shrimp Tacos

Ingredients
- 1 lb. raw shrimp,(medium-large sized) tails removed
- juice of 2 limes
- 2 Tbsp. olive oil
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. garlic salt
- 1/2 tsp. pepper
- 8 corn or flour tortillas
toppings:
- sliced red cabbage
- pico de gallo salsa
- sliced avocados
Instructions
- In a bowl, place the raw shrimp and top with the lime juice. Let sit for 10-30 minutes to marinate.
- In a small bowl, combine the spices; chili powder, cumin, garlic salt and pepper. Stir together with a spoon.
- In a large skillet, add the olive oil and heat over medium-high heat. Place the marinated shrimp into the hot skillet in one even layer. Sprinkle the top side of the shrimp with half of the seasoning. Cook for approximately 3 minutes. Flip the shrimp, then sprinkle with the remaining seasoning and cook for another 3 minutes. Promptly remove from heat.
- Toast or warm the tortillas.
- Assemble the tacos with the red cabbage, pico de gallo salsa and avocados, then top with the chili lime shrimp. Enjoy right away while warm.
