My friend Jeanine and I were just talking about how as soon as school starts, schedules pretty much immediately get busy. Our kids are all involved in fall sports, along with their other school activities. Practices, games, recitals, homework, and projects tend to make weeknights especially hectic, making it rather difficult to have family dinner around the table.
With this in mind, I got to thinking about how we can still do all the stuff, and have a quick, delicious dinner ready when the time comes. I quickly pulled out my slow cooker, and made these delicious and super simple Slow Cooker Balsamic Steak & Mushroom Sandwiches.
A slow cooker or crock pot, is a fantastic tool for getting dinner on the table on busy weeknights. Not only does it do all the cooking for you, it makes these fantastic steak sandwiches, tender, juicy and loaded with flavor! With just a few minutes of prep, this steak sandwich recipe will be your new go-to recipe for busy weeknight dinners.
Here are the simple steps to making this easy and delicious dinner idea:
Step 1: Add Steak and liquid to the slow cooker
Begin by adding a sirloin steak (brisket, tri-tip or round also work well) to the bottom of your slow cooker. For the cooking liquid, combine beef broth and balsamic vinegar and pour over the steak. The broth and vinegar will not only work to tenderize the meat as it cooks, but will give it amazing flavor.
Step 2: Season the meat
I kept the seasoning simple using just salt, pepper and minced garlic. These are added to the top of the steak after pouring in the liquid. For the salt and pepper, I simply used a few grinds of each to season the meat to my taste – feel free to use as much or as little as you prefer. Mince about 2-3 cloves of garlic and add to the top of the steak. If you’re using pre-minced garlic (from a jar) add about 1 ½ tsp, and evenly sprinkle over the meat.
Step 3: Add Sliced Mushrooms
Once the meat is seasoned, topped the steak with sliced mushrooms. The mushrooms add a great hearty texture to the sandwiches, and when cooked with the steak and balsamic liquid, take on a great flavor.
After adding the mushrooms, set the slow cooker on low, cover with lid and cook for approximately 6 hours.
When picking up your ingredients at the store, be sure to grab some amazing Martin’s Hoagie Rolls or Martin’s Sandwich Potato Rolls. These really are the perfect base for any sandwich, and are awesome to have on hand for busy school nights when you need a quick dinner.
Step 4: Slice the cooked meat
After the steak is done cooking, transfer from the slow cooker to a cutting board, and slice into thin strips for the sandwiches. You can then add the steak strips back into the liquid and mushrooms to keep warm or serve right away.
Pair the steak strips and mushrooms with Martin’s Sandwich Potato Rolls, for a quick and easy “build-your-own-sandwich” buffet. My boys quickly put together their steak sandwiches, and topped with mushrooms and provolone cheese. They LOVED these!
If you want to serve the steak sandwiches already built, simply add the Martin’s Hoagie Rolls to a baking dish, fill with the steak and mushrooms, and top with slices of provolone cheese. To melt the cheese, I placed the baking dish in the oven for about 5 minutes at 425.
Once I pulled these gorgeous steak sandwiches out of the oven we had an incredible quick and delicious dinner on the table. This took just 10 minutes of prep to get the steak in the slow cooker, and maybe another 10 minutes to slice and build the sandwiches before dinner. It doesn’t get much better than this!
These awesome Balsamic Steak and Mushroom Sandwiches are a fantastic dinner solution for the busiest of weeknights. As fall baseball practices and games begin, this dinner idea will be awesome to have ready to go when we walk through the door.
