This salad is wonderfully healthy, and when you make your own balsamic vinaigrette or poppy seed dressing you’ll save major calories. This spinach strawberry salad recipe is the perfect meal prep salad to make on the weekend and to enjoy during busy weekdays when you don’t have much time.

To make a strawberry spinach salad, you’ll need fresh, baby spinach, fresh sliced strawberries, sliced celery (optional), pickled red onions (optional), 1/2 avocado peeled and sliced, and chicken (rotisserie or grilled) for additional protein.
I used leftover store-bought rotisserie chicken from Costco. Costco is a my favorite place to get rotisserie chicken. You can also get it pre-shredded and vacuum-sealed in 2.5 lb packages. You can add grilled or rotisserie chicken to this strawberry spinach salad recipe for extra protein. Adding a hard-boiled egg is also a great option to add more protein.

I recommend making your own dressing for this strawberry spinach salad recipe. Most store-bought salad dressings contain very unhealthy, ultra-transfat oils (soybean oil, canola oil, corn oil, ect.) They almost always have added sugar, usually disguised as high-fructose corn syrup. With these two very unhealthy ingredients many bottled salad dressings top out at 140-160 calories for 2 Tablespoons.
Instead, make your own dressing. There are two great dressing ideas for this Strawberry Spinach Salad Recipe: Balsamic Vinaigrette or Creamy Poppy Seed Dressing.
Honey Balsamic Dressing: 1/4 c. balsamic vinegar, 1 Tbsp. olive oil, 1 tsp. minced garlic, salt and pepper. Whisk thoroughly. 2 tablespoons of this dressing is a serving.
Creamy Lemon Poppy Seed Dressing: 1/3 c. plain Greek yogurt, 3 Tbsp. fresh lemon juice (juice of 1 large lemon), 2 tsp. granular monkfruit sweetener like Lakanto, and 1 tsp. poppy seeds. Whisk thoroughly. 2 tablespoons of dressing is one serving.
My Avocado Lime Ranch Dressing or my Greek Yogurt Ranch Dressing would also be great options.

Strawberry Spinach Salad Recipe

Ingredients
- 4 c. fresh baby spinach
- 1/2 c. fresh strawberries, rinsed and sliced
- 1/2 medium avocado, sliced
- 1/4 c. celery, sliced
- 2 Tbsp. raw walnuts
- 2 Tbsp. pickled red onions
- 2 Tbsp. goat cheese crumbles (optional)
- 4 oz. pre-cooked rotisserie or grilled chicken (optional)
Instructions
- In a large bowl, toss all ingredients together.
- Top with your preferred dressing, toss to coat. Transfer to a serving dish or plate and enjoy right away.
