As soon as the holidays are over, I begin to crave fresh, fruity flavors. Maybe it’s all of the rich food, or the over abundance of Christmas cookies, that gets a little much. Or maybe it’s the fact that everywhere you look in the produce section of the grocery store there are pineapples, mangoes, and all different types of citrus fruits. I really can’t resist these fresh, delicious flavors, so I decided to mix them all together into this amazing Tropical Pineapple Mango Salsa.
This salsa tastes and smells absolutely incredible! Perfect just by itself to eat with multi-grain tortilla chips, making it a fantastic healthy snack. It’s also great to add to grilled fish, like my Grilled Cedar Plank Salmon and chicken, like my Spicy Verde Grilled Chicken! It’s a great way to add additional flavor and texture to a healthy meal, without all of the extra calories and fat like extra oils or sauces may bring.
The flavors of this salsa are wonderful! The lime juice brings all of the fresh, fruity flavors together, and the crunch of the pepper and onions add the perfect texture to this salsa. The cilantro is the perfect addition, however, I know some people are not big fans – feel free to omit if you don’t like it.
